I decided to make snail pie with cottage cheese and cherries from shortbread yeast dough. Why? Because the puff pastry may seem underbaked due to the cherry juice. And we recently baked a pie with apples and poppy seeds using rich yeast dough.

The choice turned out to be successful: the fluffy, tiny dough went well with the cherry and curd filling.

Ingredients:

For shortbread yeast dough:

  • 25-30 g fresh yeast;
  • 3 tablespoons sugar;
  • Half a glass (100 ml) of milk;
  • 250 g butter;
  • 1 egg;
  • 4 cups flour.

For the curd filling:

  • 200 g cottage cheese;
  • 2-3 tablespoons of sugar;
  • 1 packet of vanilla sugar.

For the cherry filling:

  • 300 g pitted cherries;
  • 1-2 tablespoons of starch;
  • 2-3 tablespoons of sugar.

And powdered sugar for sprinkling.

How to bake snail pie with cherries and cottage cheese:

We prepare shortbread and yeast dough, as for “Crimean” bagels.

Grind the yeast with sugar, add warmed milk and mix.

Rub the butter and flour with your hands, add the egg.

Pour the yeast and milk into the flour and knead into a soft dough.

Place the dough in the refrigerator for 1 hour.

Prepare the curd filling: mix the cottage cheese with simple and vanilla sugar.

And put the cherries in a colander to drain the juice.

Take the dough out of the refrigerator and divide it into 2 parts. Sprinkle the table with flour and roll out one part into a rectangle 3-4 mm thick. We cut it into two strips 10-12 cm wide, the edges can be trimmed, and then molded and rolled out again. After crushing the strips with starch, place the cherries in the middle and sprinkle a little sugar. Then we wrap the edge of the dough and seal it carefully to make a tube with cherries.

We make tubes with cottage cheese from the second half of the dough in the same way. I made a few more bagels from the leftover dough.

We cover the round shape with parchment, grease the bottom and sides with sunflower oil, and lay out the tubes, forming a snail. Starting from the center, we roll the tubes in a spiral, alternating: with cherries, with cottage cheese, again with cherries, again with cottage cheese.

Bake the pie for about 45-50 minutes - until the top becomes golden brown and a wooden stick remains dry when testing the dough - first on medium heat (180-200C) to bake, and then on high (220C) to brown .

After letting the cake cool a little, open the pan and transfer it to a plate, where we generously rub powdered sugar through a strainer.

Sweet snail is ready!

Ingredients:

  • Puff pastry – 500 g;
  • Pitted cherries – 250 g;
  • Granulated sugar – ½ cup;
  • Starch - 2 tbsp. l;
  • Egg – 1 pc.

Cooking process:

  1. Roll out the puff pastry into a thin layer and cut into strips 10 cm wide.
  2. Grind the cottage cheese to avoid lumps, add sugar and vanilla to taste.
  3. Free the cherries from juice. To do this, put it in a colander and let it drain.
  4. Fill half of the dough strips with curd filling. To do this, place the cottage cheese in the center and form a tube, sealing the edges well.

First, mix the dry ingredients - flour, salt, soda. Then add softened butter and rub the flour and butter with your hands until crumbs are obtained. Then add kefir and knead into a soft elastic dough.

Roll out the dough, sprinkling the table with flour to prevent the dough from sticking, into a thin layer 5 mm thick. Trim the excess dough from the edges and make a square or rectangle. Cut the dough with a knife or roller into even strips of equal width.

Place cherries (pitted) on each strip. Mix 4 tablespoons of powdered sugar or sugar with starch. Starch is needed to bind the juice that will be released from the berries; starch will turn it into a jelly-like mass. This way we will prevent juice from leaking out of the dough and the integrity of the dough will not be compromised.

Sprinkle the berries with a mixture of powdered sugar and starch, 1 tablespoon of the mixture per 1 row of berries.

Cover the berries with dough, pinching the edges tightly. Turn each strip seam side down. And press down a little so that the tucks don’t come apart during baking.

Yeast dough requires a little fiddling and you will have to prepare it yourself. To do this, combine and mix 220 grams of warm milk, one egg, a spoonful of sugar, add a teaspoon of yeast and mix again. Wait for the yeast to dissolve and pour everything into a bowl. Gently pour the sifted flour into a bowl and knead the dough. The dough should be soft, so add flour in small portions. You will need approximately 350-400 grams of flour. Cover the soft airy dough with a towel and leave it to grow, rest and gain strength. If the kitchen is warm, then after 30-40 minutes you can already work with it.

How to make snail pie with three fillings

While the dough is resting, you need to prepare apples, cottage cheese and cherries. Wash the apples, chop them finely, you can grate them. I cut it into small cubes. With cherries everything is clear, take them out of the refrigerator or open the jar if the cherries are canned. I always remove the seeds before freezing and when canning, but if it happens that the fruits have seeds, then they must be removed. Now about the cottage cheese. Beat one egg into the cottage cheese, add 1 tablespoon of sugar and vanilla, mix. The fillings are ready, the dough has risen, you can start shaping the pie.
