For 12 pieces you will need:

15-20 grams of fresh yeast

2 tablespoons of sugar

1 teaspoon (no top) salt

3 incomplete glasses of flour

1 glass of water

From exactly the same, the simplest set of products, we will now prepare the simplest round buns. We will make the dough without dough, but a little softer in structure than we did for bread.

Pour one full (to the brim) glass of warm, but not hot water into a deep bowl.

Add yeast. This time we reduce the amount of yeast a little, to a normal amount. Last time, when baking bread, I deliberately increased the amount of yeast so that beginners would not have problems with raising the dough.

Pour two tablespoons of sugar into a bowl.

Add an incomplete teaspoon of salt.

Mix yeast and sugar-salt well with water.

Measure first two full (level with the edges) glasses of flour and pour into a bowl. Third glass of flour measure first completely, and then reduce flour one tablespoon (heaping). The most daring and those who last time (when baking sourdough and unsquashed bread) the dough turned out to be too steep - remove two spoons.

Pour an incomplete third glass of flour into a bowl.

Start stirring the dough with a regular tablespoon, in a spiral from the center to the edges of the bowl.

In the process of stirring, pour in 4 tablespoons of vegetable oil.

The dough will be very sticky at first. But this is not a problem. The main thing is that there is no flour left on the walls of the bowl, and there are no noticeable flour lumps in the dough itself.

Cover the bowl with a clean kitchen towel and set aside for 20 minutes. You do not need to put the bowl with the dough in a particularly warm place (in the oven, near the radiator, and so on). Normal room temperature is sufficient.

After 20 minutes, put the dough on the table and punch down.

After the gluten has swollen (just in these 20 minutes), the dough is very quickly and easily made uniform and smooth in structure.

Return the dough back to the bowl.

Cover the bowl again with a towel and leave to rise for 1 hour.

After an hour, put the dough back on the table.

Remember well again.

Similarly, return to the bowl, cover with a towel and give it another hour to rise again.

Then grease the surface of the table with vegetable oil. Attention! Lubricate with oil sparingly, in a very thin layer. You only need the dough not to stick to the table. And it did not float in oil, like boats on the sea. One tablespoon of vegetable oil should be enough for a square meter of surface.

Turn the dough out of the bowl onto an oiled surface.

Stretch it a little with your hands in length (sausage).

Cut in half.

Then each half into three parts.

And cut each part in half.

In total, you will get 12 approximately identical pieces of dough.

Turn on the oven to warm up to 220 degrees. Line a baking sheet with baking paper.

Roll each piece of dough with your palm on the table so that it rolls into an even ball.

Transfer the dough balls to a baking sheet.

Leave the baking sheet on the table for the last proofing before baking for 25 minutes. During this time, the oven will also warm up well and the buns themselves will rise well (increase in size).

Take your time, do not stand "over your soul" at the baking sheet. Do not rush, do not rush the dough, putting it in a warm place. The main mistakes of beginners when working with yeast dough are proofing, either insufficient, and then the dough will simply tear in the oven, or excessive - when the dough simply peroxides before baking.

Set a timer for 25 minutes and walk away. This time will be enough for the proofing of small buns from ready-made (two punches) yeast dough.

Then put the tray in the oven.

If you have an electric oven with top and bottom heating elements, then place the baking sheet in the center. If the oven is gas, then the baking sheet should be placed at the highest possible height.

Bake the buns for exactly 15 minutes.

That's actually all.

Now you know and are able to do the main thing in working with yeast dough: make a dough, start a doughless dough and bake simple buns - which means any buns. Everything else for you is now sheer nonsense. Do not doubt!

It will take: 20-25 tablespoons sifted wheat flour, 1 cup milk, ¼ cup vegetable oil, ½ cup water, 1.5 tsp. dry yeast, ½ tsp salt without a slide, sugar to taste.

How to cook quick buns with yeast. Mix yeast in water, add 2 tbsp. flour, leave warm until fermentation, you can put a glass in a bowl of warm water. Turn on the oven at 200 degrees. Pour the yeast mass into a large bowl, pour in milk and butter, add sugar and salt, mix, then knead the dough, gradually adding flour - the dough should become soft, non-sticky. Divide the dough into 50g balls, flatten into cakes up to 2cm thick and put on a greased sheet. Make notches on top of the buns with a knife in the entire width, leave for 5 minutes and then bake for 12-15 minutes or until cooked and browned. Quickly grease the finished buns with cold water, cover with a towel.

Buns are a great addition to tea. Cooking is not at all difficult, the main thing is to decorate the dish beautifully. Not everyone can bake twisted buns with braided patterns.

But in this article, you can learn how to make beautiful buns very simply. These will be braids with patterns that everyone will be delighted with.

  1. I begin to prepare beautiful rolls from yeast dough by making dough for kneading dough. Warm the milk to room temperature, only then add yeast to it and completely dissolve their composition in it. You also need to enter 2 tbsp. sugar sand, mix. The mixture should become homogeneous. It is worth introducing 1 tbsp into it. flour and mix. Cover the dough with a towel, move it to a warm place, let it stand there for about 15 minutes.
  2. You won’t be bored, because it’s also worth warming up the sl. oil, let it cool and add 2 pcs. chickens. eggs.
  3. I add sugar. sand and mix. It's best to do this with a whisk. I'm bringing in a van. powder, salt, sow flour. It is worth adding the last ingredient in parts to make the test batch from the yeast composition lush. Using a spoon, mix the mass, it remains to knead with your hands.
  4. I cover the dough of the yeast composition with a towel, let it stand for 40 minutes in warmth, you can wrap it in a film. During this time, it will become 2 times larger. Next comes the molding of the buns.

  1. The braid can be both large and not. If you make large rolls, then it is worth dividing the dough mass into 2.3 parts. Knead each part of the dough well. After dividing into 3 bundles of their dough and roll out.
  2. Weave bundles of dough in the form of a pigtail. The rest of the braids need to be done the same way. As you can see, even such forms of buns as wicker rolls are elementary to roll up.
  3. It is worth mixing milk with chickens in a cup. yolk. Beating the mass in this case is not worth it. Just make sure it's uniform.
  4. Lubricate the surface of the dough with the mixture and cover with sesame seeds, poppy seeds, sugar. In general, the sprinkling of dough is at your personal discretion.
