The idea to create a food truck with coffee came to Roman Magdenko when he was walking with friends in the park. “At first we paid attention to the ice cream trade, but then I realized that our warm season is not so long, and people always drink coffee,” says Magdenko. The idea was supported by colleagues Ivan Koval and Nikita Suvorov, and in the fall of 2014, the three of them registered Mor-Fe LLC.

Through a site selling used cars, novice businessmen found an abandoned 1991 GMC van in the Moscow region and bought it for 250 thousand rubles. “This is a classic American van with a big engine and a great interior. The good old metal van, it seemed to us very charismatic, correct, ”recalls Magdenko.

Converting the van into a coffee shop was a big investment, but there was nowhere to go. “The car was pretty rotten. We found out about this only when we removed everything down to the metal, ”recalls Magdenko. In the van, we had to digest and replace the metal, make heat and sound insulation, sheathe the interior with food grade stainless steel and install structures for equipment - a coffee machine, a refrigerator, an electric generator for autonomous operation. “We did everything ourselves - after work to the garage, from the garage to work,” recalls Magdenko. Externally, the car also changed - a familiar artist designed and painted the car in cheerful colors, depicting coffee beans on it.

Taking into account the finishing and purchase of equipment for the van, entrepreneurs spent about 2 million rubles. Magdenko and his partners borrowed this money as individuals from several banks. Initially, the founders planned to launch a business, see how it would work, and when incomes grow, quit office work and go freelance. “But practice has shown that not everything is so rosy,” Roman complains. He still combines business and work as a manager in one of the largest Russian insurance companies (he asked not to disclose its name).

Although mobile trading is not formally prohibited by law, in Moscow, as in many other regions, it is equated with non-stationary trading, and this leads to difficulties. In particular, a retail facility must be included in the layout of non-stationary retail facilities, take part in the auction, conclude a lease agreement for a land plot, etc. In fact, the procedure is no different from agreeing on a kiosk, although the main advantage of a food truck is that at any time it can be taken away.

According to Magdenko, he and his colleagues knew about this when they launched the project, but they hoped to agree with the owners of business centers about working on weekdays. “In fact, it turned out that business centers prefer to install fixed points,” he says. A solution was found: entrepreneurs began to work at corporate and city events. This is exactly how almost all Moscow players in this market act, organizer of the food truck festival Anastasia Kolesnikova told RBC: “There is no law on mobile trading, so no one can leave on weekdays, everyone mostly works either at events or on private territories.”

Realizing that it would not be possible to trade on weekdays, the founders of Mor-Fe began to look for who needs a coffee van at outdoor events. “Initially, we were looking for clients on our own: we scattered commercial offers, watched ads, contacted the organizers. Over the past year, a client base has already formed, and now clients themselves invite us, ”says Magdenko. The Mor-Fe van made its debut at Maslenitsa in the Etnomir complex in the Kaluga region in February 2015, and in a year and a half the coffee van managed to participate in dozens of festivals - including Dobrofest, Wild Mint, ArchStoyanie, Bosco Fresh Fest, worked at various events in the city parks (VDNKh, Krasnaya Presnya, Hermitage Garden, Kolomenskoye, Tsaritsyno), at the City Day in Yaroslavl. The van has become a regular participant in the Moscow Raceway food court.

Roman was looking for the right coffee for a long time - it was expensive to buy from Moscow roasters, regional ones did not have enough volumes or logistics failed. As a result, we settled on a small Izhevsk company Tasty Coffee, from which Mor-Fe buys from 15 to 30 kg of coffee once a month - this is quite enough to work at outdoor events. Magdenko is proud of the fact that coffee arrives on the fifth day after roasting and is stored for no more than a month. "I've always wanted to brew the right coffee, real coffee, with the right ingredients," he says.

For even longer, the wagon owners searched for suitable water. “I read how one Italian approached coffee brewing from a scientific point of view and found the ideally correct water for brewing espresso - there were no shades in it, the water was a certain softness, there was no mineralization. We tortured all manufacturers, they say, send us the physical and chemical composition of your water, ”recalls Magdenko. A suitable brand of water was found after three months of selection, but the entrepreneur refused to name it so that competitors would not take it away.

To save on barista salaries, Magdenko taught himself how to make coffee himself. He received a barista certificate from the Bartending Association of Russia and began training on his own equipment. Over time, the barista was nevertheless hired - now his salary varies from 2 thousand per day on weekdays to 2.5 thousand rubles. on weekends, and if the trade is active, the barista can receive up to 15% of the daily revenue.

A warehouse for coffee was organized in a garage, which was rented for a van for 15 thousand rubles. per month. It is much more expensive to rent a place for a van at events - from 10 thousand to 150 thousand rubles. per day of work. The top figure often exceeds daily revenue, while rental costs should not exceed 25% of revenue, otherwise they eat up all the profits. Events where food trucks are invited for free, according to Magdenko, happen two or three times a year.

On average, a van sells about 200 servings of coffee per event and receives 50-60 thousand rubles. revenue. Demand depends on the weather, the location of the van and the ability to pay. “Sometimes we seem to be standing with colleagues on one site, clients approach one, but not the other. The difference is 10 m, and the traffic is not the same: people are lazy, they saw the first coffee shop they came across and approached, ”explains Roman. The average profitability of a coffee van, he says, is now around 13%, although at some events it can reach up to 40%. For example, at the Bosco Fresh Fest festival, a mobile coffee shop earned 78,000 rubles in two days. net profit.

The cost of a portion of coffee, according to Roman Magdenko, is 20% of its final price for the buyer, including water, a cup, a lid, a napkin, a portion of sugar, a stirring stick, in a word, everything that comes with the drink. In "Mor-Fe" coffee is sold on average for 200 rubles. “The product is high-margin, but we must not forget about overhead costs: equipment depreciation, gas costs to get to the event, rent, barista salary. Since the beginning of the year, we have already spent 39% of our revenue on rent,” he says. It is possible, of course, to reduce the cost of coffee and water, but Magdenko is afraid that the quality of the product will fall.

For food trucks that sell food, profitability can reach up to 50-60%, and revenue - up to 500 thousand rubles. for one trip in the presence of a large flow of buyers and the ability to quickly process orders, the founder of the Vokker noodle network, Alexei Gisak, told RBC. Two years ago, specifically to facilitate logistics at events, the Vocker network acquired two food trucks, each of which invested 2.5 million rubles. However, in recent years, there has been less and less sense from working on the road, says Gisak: “Now the organizers charge a lot of money for the event, but they are trying to drive 50 food trucks there. As a result, everyone earns a little bit. When we started, there was never such a variety of food at any event.”

However, Roman Magdenko fundamentally does not want to sell food in his van. “In principle, you can make the same noodles, you don’t need a lot of space for this, and there is where to place the equipment. But it smells like coffee in here. And if you buy coffee, and inside there is still the smell of noodles with some ingredients, it’s not the same, ”he explains.

However, they still plan to add desserts to coffee at Mor-Fe: in the summer, along with coffee, they sell ice cream from GEF Rus, and in winter, confectionery from a small manufacturer near Moscow, Rivolna. “It’s summer now, not the season for cakes, but in the fall we will definitely resume work with them,” says Magdenko.

According to Anastasia Kolesnikova, there are now between 150 and 170 food trucks in Russia, about 100 of which operate in Moscow. However, the number of food and drink vans could grow to 50,000 across the country if the State Duma adopts the amendments to the law on trade developed by the Ministry of Industry and Trade, Vladlen Maksimov, president of the Russian Coalition of Kioskers, told RBC. “We have an exorbitant cost of space for rent, but here we don’t need space, we just need the opportunity to get up,” Maximov says. Even if the law is passed, the working conditions of food trucks are still unknown, says Anastasia Kolesnikova. “I assume that Ginza and several large players will lobby their interests. In principle, it is more convenient for the authorities to bid for permission for one company, it is easier to control it than 100 different entrepreneurs,” Kolesnikova fears.

As long as there is no law allowing free trade, food trucks cannot be an independent business, says Alexei Gisak, founder of Vocker. According to him, with the “weekend” mode, investments in a food truck cannot be recouped in one season, unlike a regular food pavilion. “A food truck requires about 1.5-2 million rubles, since you need to buy a normal car, re-equip it, and finish it. To beat off 2 million with a profitability of 25%, you need to earn 200 thousand rubles. in a day.
