Spilled chocolate milk. Chocolate with your own hands. How to make chocolate from cocoa

Since the outlandish cocoa beans came to the European continent, confectioners have no rest.

They invent more and more delicious sweets from products obtained from exotic fruits of chocolate trees.

Sweet tooth also does not sit still.

Each of them at least once was lucky enough to make a delicacy at home, using both specially purchased ingredients and various little things from home stocks: nuts or vanilla, raisins or dried fruits.

The inventors of new forms of antidepressant (namely, chocolate) do not stop there, improving their culinary skills, inventing fresh sweet combinations and configurations. But for starters, a beginner in the home chocolate industry would do well to get acquainted with the basic recipes and general principles for making real chocolate at home.

Chocolate at home - general principles of preparation:

Don't skimp on products! The main ingredients of chocolate are cocoa powder, butter, sugar or honey, as well as nuts and raisins. By buying a little less ingredients, you run the risk of getting a delicacy of inadequate quality and taste.

When making chocolate at home, remember that the normal temperature for making quality chocolate is not too high: no more than 32 degrees Celsius. This is easy to check manually: touch the mixture with your hand - and if it does not burn the skin, then your chocolate is not ruined yet.

Connoisseurs say that the mixture should not be put on an open fire, although some recipes indicate just such a method. But it is better to use a double boiler or a water bath.

Do not start making chocolate on an industrial scale. Start with a small portion. If you are satisfied with the taste and quality, then you can make a larger portion of the treat.

To make the filling “inside” your sweets, add it in layers alternately with chocolate.

Filling for making delicious chocolate at home:

The filling for homemade chocolate can be any sweetness that you like. Some sweet tooth prefer nuts (peanuts, walnuts, hazelnuts) and dried fruits (raisins, dried apricots, prunes), others - citrus zest, others - cracker or waffle crumbs. The filling is crushed and added already to the hot mixture, then stirred and poured into molds.

Chocolate made with milk is more popular among sweet lovers than natural dark chocolate. This is due to its sweet and delicate taste. Its aroma helps to relieve stress and uplift the mood. Thanks to this article, you will get acquainted with and learn how to cook it. See photos of milk chocolate below.

The benefits of chocolate

Chocolate is rich in phosphorus, potassium, calcium and magnesium. It favorably affects the heart and nervous systems. Increases the work of brain activity, gives a boost of energy, improves memory and the ability to concentrate. Chocolate is often called an antidepressant. It is recommended to use it in apathetic and depressive states, with stress and anxiety. It has a calming effect on a person, contributes to the normalization of sleep.

But you must remember that chocolate is primarily a sweet product that has a high calorie content. Consuming it in large portions can harm the body.

How to choose the right chocolate?

The first thing you need to pay attention to when choosing chocolate is its composition. Natural chocolate contains cocoa, sugar and cocoa butter. White chocolate does not contain cocoa powder. Milk chocolate includes milk powder.

If GOST is indicated on the chocolate packaging, then you can be sure of the veracity of the composition of the product.

High-quality chocolate has a solid structure and at the same time breaks easily. It should be dark in color, the presence of light shades in the product indicates that soy is present in its composition. If chocolate crumbles poorly and breaks perfectly, then it has a lot of additives and thickeners.

If lecithin is found among the components on a pack of chocolate, then there is nothing wrong with that. This component helps the chocolate mass to become homogeneous.

  4. Pour the finished mass into molds, allow to harden completely.

What is the difference between white chocolate and milk chocolate?

In the favorites of avid sweet tooth, milk chocolate occupies a leading position. White chocolate is in second place. White chocolate has a delicate pleasant taste and subtle vanilla aroma. Its main difference from its chocolate brothers is the absence of cocoa beans. This fact will please opponents of caffeine. But it is precisely because of this difference that white chocolate should be consumed in smaller quantities. Caffeine in the composition of the product helps to break down vegetable fats, and its absence contributes to the fact that fats in the body dissolve much more slowly. Also, the calorie content of white chocolate is higher than that of milk or bitter. In addition to the delicate taste, its advantage is a small percentage of the likelihood of an allergic reaction. Like all sweets, white chocolate should be consumed in moderation.

Making white chocolate is not much different from the classic milk chocolate recipe. It does not use beans, the whole emphasis is on the presence of cocoa butter and milk powder.

Required products:

  • 80 grams of finely ground powdered sugar;

  2. Heat the oil in a water bath.
  3. Add vanilla and stir.
  4. After dissolving the ingredients, add powdered milk. Stir constantly so that the mass does not burn.

In the process of preparing chocolate, so that lumps do not form in it, use the finest cocoa powder in size. If this is not found, then sift the usual powder through a sieve.

Add nuts, raisins, spices or coconut flakes to the chocolate mass to create a new individual product. In this case, you will get an original taste of milk chocolate, your guests' reviews about it will only be positive. Add larger ingredients, such as dried fruit, to already prepared chocolate before freezing it.

Instead of regular sugar, try adding honey, jam, or another sweet substitute to the chocolate mass. You should be aware that the density of the mass may change, so you need more dry ingredients and less liquid (milk).

Ingredients

  • Cocoa beans (grated) - 100 g
  • Cocoa butter - 50 g
  • Condensed milk - 3-4 tsp
  • Powdered milk (if you want more milk chocolate) - 1-2 tsp.
  • Raisins (+ nuts, optional)

Here are our ingredients (although there is no condensed milk in the photo, but it is in the composition). The fact that black is cocoa liquor - it happens in briquettes, like mine, it happens in powder, you can just grind the cocoa beans in a coffee grinder, but to get chocolate in consistency, like a store, it is better to use it in briquettes; the fact that white is cocoa butter, it can be lumpy, but it can be in powder or cullets - you can do anything.

We put the cocoa products in a deep bowl and send them to the microwave at maximum power for 2-3 minutes, depending on the power of your microwave, I have a rather weak one, so it takes a little more time. You can also melt cocoa products in a water bath or over very low heat. Cocoa liquor melts faster than butter, but to equalize their melting speed, you can grind cocoa butter into smaller pieces.

Next, add condensed milk - 2-3 tsp. at this stage, then you can add more,

and milk powder if you like milk chocolate. I also love milk chocolate, well, at least that's how it seemed to me before, but now, having tried real homemade chocolate - it's quite bitter, I just fell in love with it ........ oh, what it has suffered me))) )......

And we begin to beat, first at a slow speed, then at the highest speed. In general, the ratio of cocoa butter / cocoa liquor is ½, this is quite “fatty”, usually it is made 1/5 or even 1/10, then the finished product will turn out to be harder, more chocolatey, but at the same time more bitter. Cocoa butter, as it were, softens the taste, but at the same time, so that it does not exfoliate, it is necessary to beat it very carefully and for a long time, about 5-7 minutes;

at first, our mixture will have a consistency similar to icing, then, as it is whipped, it will thicken ...

thicken...

and in the end it will turn into such a kind of “dough”, it will stick to the shoulder blade.

Then add your favorite fillers, it can be nuts, raisins, waffle crumbs, coconut, candied fruits, etc., and so on ...

And mix - either at low speed with a mixer, or just with a spatula.

Well, the mixture is ready, you can pour it into molds. I have silicone ones, it is also possible in special polycarbonate chocolate molds, the candies will turn out glossy in them, it can also be in metal ones, but I couldn’t extract them, although they say that they should be easily removed, but I don’t want something anymore experiments)))...

After that, you need to shake the molds a little so that the mixture thickens, so to speak, so that air bubbles go away, they will still be, but if you do not shake, then there will be more of them, but this is not so important, you can leave it like that, and send it to the refrigerator for 1.5-2 hours. All our chocolate is ready, pour some tea and enjoy...
