I dug up an absolutely amazing and simple pie recipe in the depths of my mother's cookbook. I wrote here that a cranberry pie, but in fact you can cook with any sour, not sugary jam: with cherries, with lingonberries ... You can cook with sweet jam, then reduce the sugar in the dough by 1.5 times. More importantly, the jam should not flow, it should be thick (you can take jam).

Such a cake was baked by all the hostesses in the Soviet Union without exception.

A pack of margarine (you can take butter) (you can leave it out of the refrigerator so that the margarine becomes soft at room temperature; and I grated it because I was too lazy to wait). I added a glass of sugar, 1 egg, a teaspoon without a top of soda (you can replace soda with baking powder). 3 cups flour. Everything was well mixed. The dough turned out pretty cool.

Let the dough rest for half an hour. In the meantime, you can make jam if you don't have any. I have a choice of cranberry or cherry.


I spread 1/2-2/3 of the dough with my hands in shape. The rest of the jam is still in the refrigerator. The dough thickness of 5 mm is enough for a delicious pie; if too lazy to smear so thinly, then it can be up to a centimeter thick. We don't make skirts! There is nowhere for jam to flow out anyway, and pieces with sides are less tasty than without them. Spread the jam on top. The height of the jam is approximately equal to the diameter of the cranberry; maybe a little more.


We take out the rest of the dough from the refrigerator, grate it and scatter the pieces over the jam.


Put everything into the hot oven. My cake was in the oven for exactly half an hour. Cool the pie, cut into squares, put on a plate. So submit. Such a presentation allows the hostess to quietly grab a piece and taste it.


Someone will call it not a pie, but a cake or a cookie. But the essence of this does not change: it is terribly delicious.

I unearthed a bag of cranberries in the depths of the freezer, who knows how left over from last year. It's a mess, we need to get to work!

I had 3.5 cups of cranberries. I added 2 cups of sugar to it (this turned out to be too much for my taste. It is better to add one glass, and then add sugar to the almost finished jam until the optimal taste). I also added half a glass of water, a pinch of cinnamon, a pinch of nutmeg (I didn’t understand if their taste was felt, it was possible to throw more). I began to cook, stirring. Boiled until the cranberries began to burst under the spoon. When this happened (the jam had already begun to boil), I slightly pureed the jam with a blender, but so that about 20 percent of the berries remained whole (they then burst very tasty and sour on the tongue - and my miss with sugar was practically leveled!) I poured half a glass of jam and stir in it 2 tablespoons of starch; I returned the starch jam to its place, mixed everything well. I simmered on low heat until the jam thickened to the state I needed. Delicious, sweet, gooey. This is what I need!

2/3 of the dough was distributed by hand in shape. It was necessary to take a larger form, and distribute the dough thinner. In my opinion, a thickness of 5 mm would be enough. I had up to a centimeter - a bit thick (but still delicious, yes!). The main thing is to restrain yourself and not to make bumpers. The husband does not accept pieces with sides, but they are not needed, because there is simply nowhere for the jam to flow! Spread the jam on top of the dough. Of course, I cooked a lot and it took even less than half of the cake. The height of the jam is about the diameter of a cranberry.

Grate the remaining third of the dough and scatter the pieces over the jam. Put everything in the oven. My cake was in the oven for exactly half an hour. Cool the pie, cut into squares, put on a plate. So submit. Such a presentation allows the hostess to quietly grab a piece and taste it.

On the near piece, it is noticeable that the dough is thick. Plus, my hand trembled and I almost made a side (the dough is thicker towards the edge - I pushed the side back).

Pour warm tea, eat cake. And everything is warm and good with you, despite the thunderstorm outside the window.

I repeat: you can make it with any jam or jam. But cranberries are perfect!

Cranberries are a very healthy berry. It grows in the north, which is why it is difficult to find it fresh in the city. Do not be upset, a frozen store-bought berry is quite suitable for making a delicious dessert.

  3. Now the filling for the biscuit pie is being made. To do this, the berry should be scrolled in a meat grinder and add sugar. Remove the cooled product from the refrigerator, make a circle out of it, then put it in a mold coated with oil;
  4. The finished cranberry filling is carefully poured onto the layer and closed with raised edges. The remaining 1/3 of the dough must be removed from the refrigerator and grated with a grater directly over the workpiece. The result is a continuous layer of chips, which should be evenly distributed over the surface;
  5. To prevent cranberry juice from leaking onto a baking sheet, a little starch is poured onto the rolled out layer, then the liquid will not leak out. Now preheat the oven and place the workpiece there, which should be baked for 30-40 minutes until crispy.

Shortcake with cranberries

Such a dough turns out to be tender, soft, plastic. It takes and retains its shape well. Cranberry pie, made from shortcrust pastry, is quite high in calories, as it contains a lot of fat, eggs and sugar.

Components for the dough: flour - 2 cups, vanillin - 15 g, sugar - 2 cups, margarine - a glass, baking powder - 1 tsp.

For filling:

  • 300 g berries;
  • 5 tbsp Sahara.

Cooking:


  1. First, the berries are sorted and washed. Stir the filling ingredients well.
  2. Now you need to turn on the oven so that it warms up. At this time, margarine should be taken out of the refrigerator and coarsely grated, add sugar, vanillin and baking powder;
  3. Sift the flour and add to the rest of the ingredients. Then everything must be thoroughly mixed. The result was a crumb;
  4. The form needs to be filled in 2/3 of the dough, knead with your hands and make the sides. After that, it is necessary to lay out the cranberry filling on the dough and smooth it out. Pie with cranberries in a slow cooker

For this you will need:

  • 250 g of granulated sugar;
  • 250 g fresh or frozen berries, a glass of sour cream, a chicken egg;
  • 100 g butter, a teaspoon of vanillin, chopped nuts;
  • 50 g, a glass of flour, a teaspoon of soda, salt to taste.

Cooking:


  1. First you need to set the “baking” mode on the slow cooker, melt the butter, add sugar and knead everything until smooth. Add cranberries and finely chopped nuts to it;
  2. After that, the multicooker should be turned off, mix the nuts with berries and oil well. The prepared mass must be leveled along the bottom;
