Interestingly, the color of the cutlets may vary. It depends on what kind of beans you will use for cooking. This time I took red beans and red onions.

Such cutlets can also be cooked lean, just do not add cheese and an egg, they do not fall apart when frying - I checked.

To be honest, it never crossed my mind to cook bean cutlets, but when I saw a recipe for bean cutlets on one of the sites, I decided to take a chance ... I love beans - and, and stew ... A little improvisation, a little experimentation ... and my recipe was born, which I happy to share! Bean cutlets were a discovery for me!

To prepare bean cutlets, we need

  • beans (any variety) - 1 cup (I’ll write right away that I didn’t try to cook from canned beans)
  • hard cheese - about 200 grams
  • dried mushrooms - about 2 handfuls, or fresh champignons - 5-7 pieces (optional)
  • boiled potatoes - 1-2 pieces
  • onion - 1 head
  • egg - 1 piece
  • garlic - 2 cloves
  • salt - to taste
  • pepper or a mixture of peppers (ground) - to taste
  • favorite spices - to taste
  • favorite greens - to taste
  • breadcrumbs
  • frying oil

How to cook bean patties

Since bean cutlets, then first of all let's start with beans!
  1. We wash the beans under running water, fill with filtered cold water and leave for 5-8 hours to swell (I left it overnight)
  2. If we use dry mushrooms, then they must also be pre-soaked for several hours, and then boiled. If the mushrooms are fresh (mushrooms), then chop them finely and fry a little.
  3. We drain the water in which the beans swelled, fill it with new water, bring the beans to a boil, reduce the heat a little and cook the beans over a fairly high heat for about 10 minutes.
  4. Then we reduce the fire and cook the beans until tender on a small fire. My beans swelled overnight and cooked for a total of just over an hour.
  5. Salt beans at the very end of cooking!!! The beans are cooked, salt the water, add spices and cook for another 7-10 minutes. Important!!! If you salt the water in which the beans are boiled at the beginning of cooking, then your beans will cook for a very long time.
  6. Drain the water and let the beans cool down.
  7. While the beans are cooling, peel the onions and garlic.
  8. Potatoes, cooked in advance, cut into pieces.
  9. We rub the cheese on a coarse grater.
  10. We pass boiled beans, potatoes, boiled or fried mushrooms, onions, garlic, favorite greens through a meat grinder.
  11. Salt, pepper, sprinkle with spices. I added Abkhazian spices that my parents bought in the market in Abkhazia, but it seems to me that suneli hops are also good for this recipe.
  12. Add grated cheese and egg.
  13. Mix all the ingredients into a homogeneous mass.
  14. If the mass turned out to be liquid, then you can add a little flour or semolina.
  15. We form cutlets.
  16. Roll cutlets in breadcrumbs.
  17. And fry in a preheated pan with vegetable oil on both sides until golden brown. Strongly frying is not worth it, because. all components are ready for use.

There were no bean cutlets on my culinary site, and at the request of Oksana, after much thought about what they should be like, collecting theoretical materials, I created them. While preparing these cutlets, I had a dilemma. Add flour or not. Without flour, the cutlets turned out very, very tender, but it was almost impossible to fry them. Of course, an experienced hostess will cope with the roast, be able to deftly turn them over and maybe everything would be in order. But I create recipes that everyone should feel comfortable with. Therefore, after all, I added flour, although in a small amount, it became much easier to fry bean cutlets. The consistency has become a little less tender, but the shape has become more beautiful and they can be turned over without fear of falling apart, although this must be done with care. And when shaping, first you need to form a ball in your hands, and give them the final shape when running in flour, since the mass sticks to your hands and this is normal. However, so that the bean patties remain tender. But if you're desperate for flourless bean patties, you can try it with the patience to fry.

I added a small amount of spices and granulated garlic to the cutlets. They fit so organically into the overall flavor range that it is difficult to imagine these bean cutlets without them. The taste of the bean itself is quite simple, so it is worth enriching it a little. Although, of course, you can not add them.
