Since we will make jam from cherry plum, it means that it is for it that you first need to go to the market. Of course, you can also collect cherry plum in your own garden, this option is even more acceptable. We spread the cherry plum in a basin and fill it with cold water, let it stand for a while and drain the liquid. We repeat these manipulations several more times and thus thoroughly wash the fruits before starting the preparation of jam.


We spread the prepared cherry plum into the pan with a dense bottom chosen for cooking, pour half a glass of purified filtered water into it and set it on fire. Bring the liquid to a boil, gently stir the cherry plum and cook for the next 15 minutes until soft.


Separately, we prepare a clean pan, put a fine sieve on top of it and pass the cooked cherry plum through it. Thus, we separate the pulp from the seeds and not boiled skins, which will not take part in further cooking. Be careful and do not burn yourself when rubbing cherry plum through a sieve.


We return the purified homogeneous cherry plum puree to a saucepan with a dense bottom, pour all the prepared granulated sugar there, mix the ingredients with a wooden spoon and cook the jam for 60 minutes over low heat. Periodically do not forget to stir the sweet mass so that it does not burn..


Using a slotted spoon, for the next hour, carefully remove the dense foam that will form on the surface of the cherry plum puree.

According to this recipe, you can also make jam from apricots, plums, apples and pears, only you need less sugar for pears or apricots, these are sweet fruits. 1. Wash the cherry plum and remove the seeds.

6. As soon as the plum has boiled and flowed, I remove the lid, reduce the heat to a minimum and continue to evaporate for several hours on low heat. At the same time, I don’t interfere with the mass even once, otherwise it will start to burn. I just come up periodically, pierce with a wooden spatula to see if there is enough liquid, and not miss the moment when the cherry plum starts to bake to the bottom of the pan. I didn’t even notice how many hours it was evaporating, because I was doing other things. Maybe an hour passed, maybe two, but somehow everything turned out very quickly.

7. The mass of cherry plum should evaporate by almost half, this can be seen from the level of the wall in the pan, it sort of settles and slightly changes color to a darker one.

8. When you notice that the mass has almost halved, you can remove it from the heat and grind it with a blender right in this pan without cooling. The consistency of cherry plum puree is similar to watery mashed potatoes, from which water was poorly drained, or to canned mashed potatoes in mayonnaise jars for baby food, which we were fed in childhood.

9. And only now it is time to add sugar. By the way, if we added it at the very beginning, then the mass of cherry plum would immediately start to burn, that's the whole secret. When I told my mother about my recipe, even she did not know how to cook jam, so she was very surprised and inspired to cook jam according to my recipe. It's as simple as that, actually! No wonder they say: "Live and learn, but you'll die a fool anyway!" :-) We fall asleep sugar and put the pan back on the fire.

10. Now we are cooking the jam, without leaving the pan, and constantly stirring with a wooden spatula so that it does not gurgle, splash, but evenly heat up and not burn. With sugar, the mass becomes even darker, the color of cherry plum jam in hot form is very similar to boiled condensed milk. But then, after cooling, it brightens again, becomes, as it were, transparent. Our task is to bring the jam to a boil (bulks appear if you stop stirring it) and dissolve the sugar. Therefore, you can try, periodically dripping jam on a plate. It instantly thickens and hardens, but be careful not to burn your tongue - even frozen jam is unrealistically hot! Try with your finger first. Sugar, in principle, dissolves quickly, so you will have to stand with a spoon near the pan for no more than 10 minutes.

11. It remains to spread the hot jam over the jars and roll up the lids. I do not turn the jars over, I just put them in a safe place where they can cool naturally, and when they have cooled I put them in the canned food cabinet.

12. Cherry plum jam is ready!

The cooled cherry plum jam becomes very thick! On the palate, despite the large amount of sugar, there is still a sourness characteristic of all plums in cherry plum jam.
