How to make cabbage pie quickly and easily

Finely chop the cabbage, then rub it with your hands until it is soft.


Beat two eggs into a small container, add sour cream, mayonnaise and salt (half the portion indicated in the ingredients). We combine these components with a whisk. If you use a mixer, you can save a lot of time.

2. To make it softer and juicier, knead it directly in the bowl with your hands. Before doing this, you can salt it a little.

3. Cut the boiled eggs into cubes and add to the filling. If you want it spicier, add ground black pepper.

9. Quench the soda with vinegar and add to the dough. Knead the dough until smooth. We have a jellied pie, which means that the dough should be thin so that we can pour it into the mold.

Clean the mushrooms and cut into pieces. We also chop the onions and fry them together with mushrooms in vegetable oil. Mushrooms should also be salted and black pepper added to taste.

Fresh herbs will also come in handy. Cut it up and mix it with the rest of the filling.

For the dough, beat 3 eggs into a deep bowl and add 8 tbsp. l. mayonnaise.

You can replace half the mayonnaise with sour cream if desired.

Mix flour with baking powder and add to the dough. You can replace baking powder with 1 tsp. soda with vinegar. Add salt and a little sugar. Stir the dough well until smooth.

The consistency of the dough should be like pancakes and spread well.

Pour half of the dough into a greased mold and level it out.

Place the cabbage and mushroom filling on top and fill it again with the remaining dough.

Bake the pie in a preheated oven at 180 degrees for about 30 minutes.

Well, why not pamper your family with a delicious pie with sauerkraut? Especially if we have prepared it for the winter. After all, it is spicier and gives baked goods completely different notes than fresh. There will be a compromise in our recipe - we will use both sauerkraut and fresh cabbage for the filling. And the pie is easy to prepare, so even those who don’t do it often can make it.

For the test:

  • flour - 2 cups
  • kefir - 300 gr.
  • eggs - 3 pcs.
  • soda - 1/2 tsp.
  • salt - to taste

For filling:

  • fresh cabbage - 300 gr.
  • sauerkraut - 300 gr.
  • onions - 1 pc.
  • turmeric - 1 tsp.
  • sugar - 1 tbsp. l.
  • salt pepper

Let's start preparing the filling.

In the recipe, the ratio of fresh and sauerkraut is 1:1, but you can safely change it depending on your preferences.

Lightly fry the onions in a frying pan in vegetable oil. When it is browned, add fresh cabbage, chopped into thin strips.

The vegetables should be slightly toasted and softened. Now it's the turn of sauerkraut. Add it to the frying pan, reduce the heat and simmer for 15 minutes. You can close the frying pan with a lid. Before finishing cooking, salt and pepper the vegetables and add a little sugar.

Instead of sugar when stewing sauerkraut, try adding 1 tbsp. l. honey - you will get an extraordinary taste.

Be sure to add turmeric, it will not only give the filling a beautiful yellow color, but also fill it with aroma. Simmer for another 5 minutes and turn off the stove.

Let the filling cool slightly, and during this time we will make the jellied dough.

Pour kefir into a deep bowl and add soda. You can add a little salt. Beat 3 eggs into kefir one at a time and stir well. This is best done with a whisk or mixer.

Sift the flour through a sieve and place in a bowl. Add flour gradually, stirring continuously. This way there will be fewer lumps. Stir until smooth. The dough should have the consistency of thick sour cream.

Turn on the oven to heat up and begin to assemble our pie.

Cover the baking dish with paper and coat with vegetable oil. Place the filling in the first layer and distribute it throughout the entire pan.

Pour half the dough on top and mix it with vegetables. Level with a spatula. Fill with the remaining dough and level again. We try to ensure that the dough covers the entire surface of the pie.

Place the pan in an oven preheated to 180 degrees for 40 minutes. Determine the readiness of the pie by the golden crust and delicious smell. Remove from the oven, slice and enjoy.

Some even call this pie lazy, but I don’t think it deserves it. After all, then you will have to call other pies lazy, for example, everyone’s adored Charlotte with apples. Jellied pie with cabbage is not lazy, it’s just very quick and convenient for housewives who don’t have much time to knead the dough.

Oddly enough, I most often think about cabbage pie in the cold season. I think the whole point is that there are no ripe fruits and berries from the dacha, but I want pies. And we have cabbage in our stores all year round, and some have their own supplies, which is even better.

For cabbage pie, white, juicy cabbage varieties are good, but not too thick-leaved. Stringy cabbage with very hard leaves will not work as well in a pie.

The dough contains the secret of the name of the pie. It is jellied because the dough is made liquid and poured on top of the filling. In terms of thickness, it can be compared to charlotte dough or even a little thinner. True, it is not made so airy and sweet, but on the contrary, kefir or sour cream is added to it, there are options with mayonnaise. You can add carrots, eggs, meat, fish, even sausage to the cabbage filling.

Recipe for jellied pie with cabbage and kefir

First, I present to you a cabbage pie with kefir. Of course, aspic, as I mentioned above. What’s so good about jellied pie dough is that the recipe will seem painfully familiar to you. If you have already read mine, then deja vu awaits you. And the whole point is that such a liquid and airy dough is ideal for a pie, and kefir becomes an indispensable assistant in this. By the way, you can use kefir for the pie, which is already approaching its shelf life, that is, it begins to ferment and bubble more strongly. And that’s all we need to make the cake soft and fluffy.

You will need:

  • kefir - 300 ml,
  • flour - 1-1.5 cups,
  • eggs - 3 pieces,
  • salt - 0.5 teaspoon,
  • sugar - 2 teaspoons,
  • soda - 1 teaspoon,
  • cabbage - 200 grams,
  • carrots - 1 small,
  • sesame seeds if desired.

Preparation:

1. First of all, chop the cabbage into thin strips. You can do this with a knife or a special cabbage grater. Don't make too big pieces. Leave the chopped cabbage on the board or put it in a bowl, and then add a little salt. Mix with your hands until it is all salted.

2. Break three eggs into a large bowl or saucepan and mix them with sugar and salt. For cabbage pie, you don’t need to beat the eggs too hard; just stir the yolks and whites until smooth.

3. Pour kefir into the egg mixture and stir thoroughly with a whisk. When everything is mixed, add baking soda. You will immediately see how it foams and begins to saturate the dough with bubbles. Thanks to this, the dough will become airy, kefir replaces vinegar and as a result we get slaked soda - a well-known homemade baking powder for dough.

4. Now gradually add flour to the dough. Add half a glass at a time and stir. Then add the same amount and stir again. After you have put in one whole glass, add the last half of the glass little by little and make sure that the dough reaches the desired consistency, approximately like cream or condensed milk, a little thinner than pancake dough.

5. Thoroughly grease the pan in which you will bake the pie. This could be a silicone or springform pie pan, a ceramic pan, or maybe a cast iron frying pan. For a springform pan, you can line the bottom with parchment paper, but also spread butter on top. This way the cake will definitely not stick. Don't forget to coat the walls.

6. Place cabbage and carrots on the bottom of the pan. You can mix them, or you can put them in layers, then the pie will have layers of different colors. Choose as you wish. Since the cabbage will lie at the very bottom, and not in the middle of the pie, it will bake perfectly and will not remain raw, you don’t have to worry about this.

7. Now take the dough and pour it on top of the cabbage. Pour evenly so that the filling is not visible. At the end, you can level it with a spatula or spoon and shake it a little to get the air out. If you like sesame seeds, now is the time to sprinkle them on the top of our future pie.

8. Preheat the oven to 180 degrees. Place the pie in it and bake for about 45 minutes. After this time, take it out and check for doneness with a skewer or wooden toothpick. The tip that you insert into the middle of the pie should come out dry. This means that the cabbage jellied pie is ready.

This cake will turn out soft and airy, almost like a sponge cake, but not sweet. The crust will brown, and the cabbage will be baked underneath and will be very tasty. Call everyone to the table and help yourself before it gets cold. Bon appetit!

Kefir is good, but sour cream is even better. Here is another interesting and tasty recipe for making jellied cabbage pie, but this time with sour cream. We will make the filling more flavorful, with carrots and herbs, and we will also add an egg to it so that it is not too crumbly.

This version of the pie is one of my favorites and I highly recommend it.

You will need for the test:

  • sour cream - 400 grams,
  • butter - 200 grams,
  • eggs - 2 pcs,
  • flour - 260 grams,
  • sugar - 1 tablespoon,
  • salt - 0.5 teaspoon,
  • baking powder - 10 grams,

For filling:

  • cabbage - 300 grams,
  • carrots - 30 grams,
  • green onions - half a bunch,
  • parsley, dill - several sprigs each,
  • eggs - 2 pieces,
  • salt - a pinch,
  • pepper to taste.

Preparation:

1. In a large, convenient bowl, combine eggs, salt and sugar. There is no need to whisk, so even a regular spoon will do.

2. Take the required amount of butter and melt it until liquid. Cool slightly and add to the eggs in a bowl. Stir everything.

3. Now pour sour cream into the resulting mixture. Sour cream can also have a low fat content; what is important here is the taste of the sour cream, and not how thick or fatty it will be. I cooked with both 20% and 15%, both times it turned out equally tasty.

4. Add baking powder and sifted flour to the resulting fluffy mass. Stir everything well, the dough should be thick, similar to pancakes or even a little thicker.

5. It's time to start filling. While we are preparing it, you can turn on the oven to heat up.

For the filling, finely chop the cabbage. Grate the carrots and finely chop the greens. Mix everything in a separate bowl.

6. Break two eggs into a small cup and stir them with a fork until the yolk and white are combined. Pour the eggs into the vegetable and herb mixture. Add some salt and pepper and stir well.

7. Grease a pie pan with butter. Whether it will be round or square is not so important. You can line the pan with baking paper, this will make it easier to remove the cake. Pour half the batter into the bottom of the pan and smooth it out with a spoon. Then place the cabbage filling on top and also spread into a uniform layer.

9. Place the pie in the preheated oven for about 40-45 minutes. After this time, check it with a wooden stick. If the dough is baked and does not stick to it, then the pie can be taken out, it is ready.

Let it cool slightly and then remove the cabbage pie from the pan. This makes it less likely to break. Cut the still warm pie into pieces and invite everyone to the table. A tasty and satisfying meal is ready!

How to make cabbage pie with mayonnaise

I’ll show you another simple recipe - jellied cabbage pie with mayonnaise. You may have already come across many recipes for making dough with mayonnaise; it is used in pies, cookies, and even muffins. The taste of mayonnaise is not noticeable in the finished baked goods; it rather becomes a useful set of products that help knead the dough. Therefore, you should not think that putting mayonnaise in the dough is the same as dressing it on a salad. Under the influence of temperature, mayonnaise still breaks down into its constituent elements and safely dissolves in the dough. But this is a very simple and quick recipe for making a pie. And besides, you can make it not only with cabbage filling. A similar dough will help you with other options.

Cabbage and egg, in my understanding, are simply made for each other and for the pie. If you still haven’t tried jellied pie with cabbage and egg, then it’s time to do so. Aspic pie, I remind you, is so called because the dough for it is mixed quite liquid and poured on top, bottom or together with the filling. When baked, a pie made from such dough turns out to be very tender and airy, not bready, but rather sponge-like. Another important feature of this recipe is that the cabbage used for the filling is not raw, but pre-prepared, namely stewed. Cabbage is stewed together with onions and carrots in a small amount of water and, ready-made, is placed in the pie. The taste of the pie only benefits from this.

For the pie you will need:

  • flour - 200 grams,
  • sour cream - 200 grams,
  • eggs - 3 pcs,
  • baking powder - 2 teaspoons,
  • salt - 0.5 teaspoon.

Filling:

  • cabbage - 1 kg,
  • carrots - 1-2 pieces,
  • onion - 1 piece,
  • eggs - 5 pieces,
  • salt and pepper to taste.

Preparation:

1. Since we will use ready-made cabbage for this pie, it is most logical to first prepare the filling. First, chop the onion in a blender or chop it with a knife.

2. Grate the carrots. I prefer to grate it on a coarse one, but you can do it on a fine one or with a grater for Korean carrots. We will simmer it later so it will still be soft in the finished pie.

3. It is best to cut the cabbage very thinly with a knife. Approximately the way it is cut for . Then cut the pieces that are too long into several parts with a knife.

4. First of all, fry the onion in a hot frying pan with oil until golden brown and soft. Try not to overcook it, this will spoil the taste.

5. Add the carrots to the onions and fry them together for a few minutes over medium heat until the carrots soften a little.

6. Now add the cabbage to the pan. Cover with a lid and reduce heat; the cabbage should not fry or burn. Add a little water and simmer until the cabbage reduces in volume. Then mix all the filling ingredients thoroughly. As soon as the cabbage begins to brown, add water, but only a little at a time. When it softens (this will take about 20 minutes), add salt and black pepper to taste.

7. While the cabbage is stewing, let’s make the eggs. It is necessary to hard boil them, cool, peel and cut into cubes.

8. When the cabbage is ready, add finely chopped greens. Mix and let simmer for another five minutes so that the filling is saturated with the aromas of the greens. You will get a very tasty pie with cabbage.

9. Let's move on to kneading the dough. Combine eggs and sour cream in a large, comfortable bowl. Lightly whisk them to obtain a homogeneous, slightly foamy mass.

10. Sift flour into the egg mixture, add salt and baking powder. You can also mix everything separately and then sift into a bowl. The main thing is that the flour is well saturated with air for the splendor of the dough of our future pie.

11. The kneaded dough should be quite thick, similar to pancakes. Stop stirring it when all the lumps disappear.

12. Grease a baking dish with vegetable oil and lightly sprinkle with flour or breadcrumbs. This way the pie will easily fall away from it. You can use baking paper, placing it on the bottom and sides. Separate about half of the dough and pour it into the mold. Using a spoon or spatula, spread it over the bottom in an even layer.

13. Also divide the cabbage filling into two parts. Spread half over the dough. Then add a layer of boiled eggs and then the second piece of cabbage.

14. Pour the second half of the dough over the filling and spread with a spoon so that the cabbage does not stick out. When baked, the cabbage that is sticking out will most likely brown too much.

15. Place the cabbage pie in the oven, preheated to 180 degrees. It will take about 40-45 minutes to cook, it all depends on your oven.
