Chip makers are doing everything they can to make sure we can't stop eating crunchy snacks. Chips are loved by both adults and children.

But, in fact, their packs should have health warnings, like cigarettes and alcohol.

Studying the nutritional value of chips

In order to find out what the chips are in terms of nutritional value, we studied the indicators from a package of an average pack of chips weighing 100 g and compared them with the daily allowance for children.

At first glance, it seems that chips cannot contain anything harmful to the body, because in fact it is the same product as boiled potatoes, which are cooked almost every day in many families. However, everything is not so simple!

The harm of chips outweighs the dubious benefits of this product. According to studies, even a healthy person after daily consumption of a pack of chips a day for a month begins to suffer from heartburn, gastritis and intestinal diseases. And prolonged consumption of a dangerous product can lead to more serious health problems.

Due to the fact that the amount of dangerous carcinogens in chips is 500 times higher than normal, cancerous tumors can occur. In addition, there is a lot of salt in the chips, which cannot but affect the metabolism.

Chips are especially harmful to children - they contain all kinds of additives that are used to prepare the product, they can provoke severe allergies. Eating chips leads to overweight. So, before you eat a pack of oily cereal, think about your health and choose something more healthy for the body.

Once Cornelius Vanderbilt, a millionaire from America, stayed at the Moon Lake House Hotel, which is located in Saratoga Springs. While dining at the hotel, Vanderbilt expressed his displeasure three times over the fact that the potatoes were cut too large slices. Local chef George Crum, being a man of character, ended up cooking thinly sliced ​​potatoes fried in oil for the millionaire. Unexpectedly, the chef's new dish was to Vanderbilt's taste. He gladly ordered it every time he dined at the hotel. Thus, "Saratoga chips", as they were nicknamed, became the restaurant's signature dish.

Seven years after the incident, in 1860, George Crum opened his own restaurant serving chips. However, over time, this dish has appeared in other places of food, which is not surprising, since it is not difficult to make chips. Soon the chips appeared on the menu of the best restaurants in America.

After another 36 years, the idea was born to pack chips in wax paper. Laura Scudder said it. Such packaging made it possible to transport the chips and extend their shelf life. Thus, the chips appeared on the shelves of supermarkets. However, the mass production of chips became possible only after the invention of the potato peeling machine. His invention was immediately acquired by one of the firms, which began mass production of chips.

What do the experts think? I studied the opinion of experts on the effect of this product on the human body. It turned out that the chips take first place in the list of the most harmful products. Chips are nothing more than a mixture of carbohydrates and fat with the addition of salt, dyes and substitutes for different flavors. Especially harmful are chips made not from whole potatoes, but from potato flour.
And although the potato itself is a useful product, it contains almost all chemical elements, in the process of powerful processing, which the potato undergoes in the production of chips, it loses all its useful properties, and instead acquires harmful ones. Due to the high content of carbohydrates (starch) and fat, chips are very high in calories. 100 g of chips contains 510 kilocalories, which is almost a third of the daily allowance for a child. That's why chips contribute to obesity.
Chips are very salty, and excess salt interferes with normal bone growth, disrupts metabolism, and can cause swelling and heart problems. The fact is that the main component of salt - sodium - has the ability to retain water: one of its molecule is surrounded by 400 water molecules! The heart has to pump more fluid through the vessels than usual, the pressure in a person rises.
Colors and flavors that give chips a ham, dill sour cream, or shrimp flavor can cause allergies. And the fats contained in chips are extremely dangerous to health, as they have a carcinogenic effect, that is, the ability to cause cancer. The fats contained in chips are the so-called hydrogenated fats. An example of such a fat is margarine. Such fats increase the level of cholesterol in the blood and increase the risk of atherosclerosis, heart attack and stroke, even at a young age, although previously these diseases were considered exclusively age-related.
There are no vitamins and minerals, not to mention the useful fiber found in apples, carrots and other vegetables and fruits, in chips. And at the same time, as scientists have found out, chips can be addictive! That is why, once having tasted thin slices of fried potatoes, the kids crave to crunch them again and again. . The average pack of chips weighs 90 g, the energy value of such a quantity of chips is about 500 kcal, and it is achieved due to technical fat, which is literally soaked in potato slices. In many products that have undergone heat treatment over 120 degrees, scientists have found huge concentrations of acrylamide, a substance whose toxic effect can cause cancer. According to European standards, the content of acrylamide should not exceed 0.1 micrograms per kilogram. And in a kilogram of chips, 1000 micrograms of this substance were found. Acrylamide is formed during the preparation of deep-fried or grilled foods, and practically not during cooking. .
Conclusion: thus, for the most part, nutritionists agree that chips do not benefit the body, they have a high calorie content.

2.3 How to make chips

Chips are prepared in two ways: molded and traditional. In the traditional way, the product is prepared from thinly sliced ​​potatoes, fried in oil, salted and flavored. Molded chips are made from potato granules or flakes that are soaked into dough, rolled and fried, seasoned. Chips are fried not in healthy vegetable oil, but in technical fat. .The manufacturer often uses palm oil for frying. Palm oil is a vegetable oil obtained from the pulp of the fruit of the oil palm. The seed oil is called palm kernel oil. The main reason for the widespread use of this oil is its low price. In most developed countries, the import of palm oil is limited, due to its high carcinogenic effect. Benefits: When palm oil is added, the shelf life is extended, as it does not go rancid, it is resistant to heat, therefore it is used in deep frying. Palm oil is rich in vitamin E and provitamin A, which are powerful antioxidants, widely used in cosmetology. The liquid part of palm oil is called palm olein. Palm olein is a light yellow liquid that does not require additional processing, which makes it an excellent substitute for vegetable and soybean oils; its use in production allows:

2.4 Practical part
2.4.1 Survey results

I conducted a survey among the students of our class. (Table 1) The survey involved 25 people. It turned out that my classmates know about the dangers of chips, but, nevertheless, they use them with pleasure. 9 of the respondents buy chips 3-4 times a week. 13 people - rarely (about 1-2 times a month). My classmates prefer such brands as Lace (14 people), Pringles (6 people), Bingre (2 people).

2.4.2 Comparative analysis of chips
I studied the rating of consumer preference in terms of choosing a brand of chips. And for my research I chose three brands of the most popular companies, these are Lace, Estrella, Pringles. And three brands that occupy low positions in the ranking: Pro, Mini Free, Bingre. On the Internet, I watched a video test, where an experiment was conducted to determine the fat content, and therefore acrylamide, in various brands of chips. I decided to do the same experience at home,
to do this, put a large chip on paper, bending it in half on both sides. Remove the rest of the chips and look at the paper on it there will be a greasy stain. The more fat, the larger and clearer the stain. A bright color indicates the presence of dyes in the chips. (table 2).
Conclusion: All tested chips contain fat. Moreover, Lays, Pro, Mini Free chips have the largest amount of fat. We also see the presence of the dye. Leis and Mini Free came out on top.Dyes can cause allergic reactions in some people. Especially this problem concerns children with not yet strong organism.
I also studied the composition of these brands and entered the results in a table. (table 2).

Conclusion: 1. All tested chips are low in protein. The amount of fat is above the norm, with the exception of Mini Free chips. The amount of carbohydrates is much higher than in Mini Fries and Bingre chips. All chips are high in calories.After eating a 100 gram bag of chips, we will get the same number of calories if we ate 633 grams of boiled potatoes or 80 grams of butter, as well as 100 grams of chocolate (1 bar).
2. One hundred grams of the product contains almost a gram of salt, when the optimal dose for children is 2 grams per day and for an adult 5-6 grams. Excess salt can lead to a slowdown in the normal growth of bones, in addition, disrupts the metabolism in the body.
3. Tested chips contain chemical additives E.
This is an abbreviation for "Europe" - Europe, as the European Commission on Food Additives labels chemical compounds contained in products, followed by a three or four-digit number, in which the full name of the compound is encoded. .

E627 disodium guanylate - flavor enhancer, can cause indigestion, allergic reactions.

E631 sodium inosinate - flavor enhancer

E160 lycopene dye, colors in a palette of red colors, is not dangerous.

1. In fact, chips do not contain any useful substances, vitamins, minerals, good carbohydrates and proteins. The main component of salt is sodium, and it is he who retains water in the body.
2. The high content of fat and starch makes chips a high-calorie food that can lead to obesity if consumed uncontrolled. Also, fats can cause a heart attack or stroke in a person even at an early age, although not so long ago these diseases were considered age-related.
3. Do not think that chips are fried potatoes. After such processing, all useful substances disappear from the potato and harmful substances remain. So do not believe flashy advertisements, since chips are unlikely to benefit the body.
The value of this work is that my classmates and I reconsidered our attitude to chips. I think my work may well come in handy, in the lessons of the world around us in elementary school and in extracurricular activities. After all, our health is priceless and we need to take care of it already in childhood.

According to legend, one of the restaurant's signature recipes was French fries. At dinner one day, a very wealthy gentleman returned the fried potatoes to the kitchen, complaining that they were "too fat." The chef, who decided to play a trick on the tycoon, cut the potatoes literally paper-thin and fried them. The dish was liked by the magnate and his friends. This recipe soon became very popular. Currently, $2 billion worth of chips are sold annually in the world, and 10 million kg of chips are sold annually in Russia. Based on these figures, we can say that chips are a favorite product. What is its use? But before answering this question, let's look at the technology of cooking.

The composition of chips. Ingredients: potato, vegetable oil, whey powder, wheat flour, lactose (from milk), flavor and aroma enhancer (monosodium glutamate, sodium 5 ribonucleotide), hydrogenated vegetable oil (including soybean), glucose, natural, identical to natural and artificial flavors, acidity regulator (citric acid), cheese powder, color (paprika extract, turmeric extract), garlic powder, milk protein, maltodextrin, salt. All chips contain salt. But the specific amount of salt is not specified. Excess salt slows down the growth of children's bones. 5. On the labels of chips, vegetable oil is indicated, a teenager needs from 10 to 20 g per day, it turns out that, having consumed only one package of chips weighing 50 g, the teenager already covers his daily allowance. Not so long ago, Swedish scientists discovered that chips contain a dangerous substance - acrylamide, which causes cancer.

Experience for the presence of oil in chips. 1. Using tweezers, I took a sample of chips. 2. Chips set on fire. Conclusion: All chips are subject to combustion. This means that vegetable oil (fat) is contained in the test sample of chips. .

Experience 2. Determining the amount of oil. 1. I put a piece of chips on paper. 2. Pressed the chips with your finger. 3. Removed pieces of chips from paper. 4. Identified a greasy spot. Conclusion: The study of chips showed that the oil (fat) content is the highest, so it is possible that the chips manufacturers write the wrong amount of fat.

Experience 3. Determination of starch in chips. Potatoes contain starch. It is known that iodine, when combined with starch, changes its color. I conducted an experiment: I dropped a drop of iodine on a sample of chips. After 3 minutes, the brown color of the iodine changed to black. Conclusion: The test sample of chips showed a black color change from iodine, which confirms the presence of potato starch. Excess starch in the human body is converted into glucose, and when accumulated in the liver, it leads to obesity.

CONCLUSION: Good nutrition is important for promoting health in childhood. In the course of my research work, I obtained a number of necessary and important results. 1. Chips contain harmful substances (dangerous food additives, flavors, carcinogens). They are dangerous and negatively affect our body, disrupting the gastrointestinal tract. 2. Experiments confirmed the presence of oil (fat), starch in the chips. This product is fatty, frequent use, which can adversely affect human health, especially on the children's body. The results I received allow us to conclude that chips are a harmful product.
