Diet No. 5 for chronic pancreatitis

  • Hot and cold drinks and dishes are strictly prohibited, any food must be warm;
    you should stick to eating at the same time every day;
  • the daily nutritional intake should be divided into 5-6 meals; it is strictly forbidden to overeat or endure hunger for a long time;
  • the content of protein foods in the menu should predominate, the pancreas is restored on it; the amount of fat should be reduced to a minimum, including vegetable oil;
  • the daily intake of salt is limited to 10g;
  • You should be critical of the list of permitted products, focusing on your individual well-being. If you feel unwell when eating any dish or product, it should be immediately excluded from the diet;
  • New foods should be introduced into the diet carefully, in small portions.
  • at the slightest discomfort, you should refuse until the functioning of the pancreas is more completely stabilized;
  • The recommendation to chew food thoroughly is also appropriate for a healthy body, but if you have a disease of the pancreas, this rule should be observed especially carefully, even if puree soup is served.

For pancreatitis in the chronic stage, the following foods and dishes from them are allowed:

  • bread - wheat bread made from premium flour, yesterday baked (if fresh, then dried), crackers made from it, unsweetened and low-fat dry biscuits (crackers);
  • cereals - oatmeal, buckwheat, semolina, rice in the form of semi-viscous or mashed porridges, cooked in water or with the addition of milk; cereal casseroles, puddings, soufflés with cottage cheese and adding a small amount of butter or sour cream;
  • Only boiled, well-cooked pasta is allowed;
  • - low-fat and non-acidic cottage cheese can be consumed in its natural form or in dishes made from it (casseroles, soufflés, puddings); hard cheese with low fat content and without spicy additives;
  • sour cream, cream, butter are used for seasoning soups and cereals; fermented milk drinks are not too sour; skimmed whole milk, diluted with water - for making soups and cereals;
  • meat and poultry - lean beef or veal, skinless chicken or turkey, rabbit. Use boiled. Meat dishes: chopped or ground in the form of meatballs, beef stroganoff in low-fat sauce, puree, soufflé, dumplings without hot seasonings;
  • eggs - chicken egg white in the form of a steam omelet is recommended; It is better to discard the yolk; you can use one no more than 2 times a week, diluting it in half with water;
  • fish - low-fat varieties: boiled in whole pieces or ground in the form of steam cutlets; boiled can be prepared in the form of aspic;
  • vegetables - potatoes, carrots, beets, pumpkin, zucchini, cauliflower, green peas: used boiled or baked, preferably in the form of puree or cream soup;
  • soups - vegetarian with vegetable broth or weak chicken. Vegetables are prepared in the form of pureed puree soup, adding half a spoon of sour cream when serving. Chicken soup is seasoned with noodles or well-boiled, pureed cereal;
  • fruits and berries - ripe, non-acidic, can be eaten raw or pureed; apples should be baked. Pureed compotes, jellies, and mousses are prepared from dry and fresh fruits, using a little sugar or its substitute (sorbitol, xylitol) for sweetening;
  • drinks - weak tea with lemon or milk without sugar or slightly sweetened, rosehip decoction, fruit juice without sugar diluted half with water;
  • daily intake of butter 30 g, refined vegetable oil 10-15 ml (less than a tablespoon), added when preparing dishes.

  1. fresh wheat bread, rye bread, baked goods, puff pastry and shortcrust pastry products;

  3. all fatty meats, pork, duck, goose, liver, brains, kidneys, sausages, smoked meats, canned food;

  5. fried and hard-boiled eggs;
  6. all crumbly porridges and limit the consumption of dishes made from millet, corn, barley, and pearl barley;
  7. from vegetables, avoid legumes, mushrooms, white cabbage, eggplant, radishes and radishes, turnips, sweet peppers, sorrel, spinach, onions and garlic, tomatoes and sauces made from them;
  8. all spices;
  9. : grapes, banana, dates, figs;
  10. confectionery products: jam, chocolate, caramel, ice cream, cakes;

Drinking mineral water

  • The amount of table salt in the diet should not exceed 5 g/day;

  • All dishes are served only warm; consumption of both hot and cold food is contraindicated;

  • Dishes are prepared only from the list of permitted products;
  • An individual diet, taking into account all the patient’s characteristics (age, condition of the pancreas and other gastrointestinal organs, presence/absence of other chronic diseases, etc.), is prescribed exclusively by the treating gastroenterologist or an experienced nutritionist.

Treatment of acute pancreatitis is carried out in a hospital setting. To treat the acute phase of the disease, a diet for pancreatic pancreatitis during exacerbation is necessary, which has significant limitations, and compliance with which is the key to achieving stable remission.

Diet for acute pancreatitis - nutritional features

Depending on the stage of the disease, the diet for pancreatitis of the pancreas and the sample menu differ significantly. From day 5-6, protein foods are added to carbohydrate foods: steamed omelettes, semi-liquid pureed porridge with skim milk, steamed meat and fish soufflés, dumplings, meatballs, meatballs, cutlets, cottage cheese with 0% fat content. If the patient is feeling well, fats are gradually introduced into the diet: unsalted natural butter, which is used to season ready-made dishes, such as porridge.

Beef steam pudding

Puree 120 grams of boiled beef (without fascia, fat and veins) in a blender, mix with 10 grams of semolina, add whipped white to the minced meat, then the yolk and a third of a glass of water, lightly add salt.

Place the thoroughly kneaded mass into a multicooker or double boiler form, greased with butter, and cook in the kitchen unit until ready.

Fish dumplings

Pass 0.3 kg of lean sea fish fillet through a meat grinder, add ¼ of a dry loaf, previously soaked in half a glass of whole milk, to the minced meat, add 2 whipped egg whites to the mixture, add a pinch of salt and dried parsley.

Boil the quenelles (small balls) formed from minced meat in lightly salted water for at least a quarter of an hour.

Vegetable puree soup

Boil 2 peeled potatoes, 1 carrot and ½ zucchini in water until tender, drain the broth, puree the vegetables, mix the liquid and puree, add finely chopped parsley sprigs (2 pieces), simmer over low heat for 3 minutes.

Serve the soup warm, seasoned with low-fat sour cream (1 teaspoon or natural yogurt).

Banana dessert

Dilute 2 packs of gelatin in a glass of hot water until it is completely dissolved, cool slightly. Add ½ liter of low-fat natural (without additives or sugar) yogurt into the jelly mass. Steam 2 bananas and 2 peaches (without peel). Line the bottom of an enamel bowl or cake tin with foil, lay out the dessert in layers: crushed biscuits, yogurt-gelatin cream, banana and peach puree. There are several such layers (depending on the diameter of the mold). Place the cake in the refrigerator for the jelly to harden.

Every day the body should receive 60–120 g of proteins (60–65% of which should be animal proteins), 60 g of fats (at least 15–20% vegetable), 300–350 g of carbohydrates (no more than 30–40 g of sugar) , no more than 10 g of table salt and no less than 1.5 liters of liquid. The average calorie content of the diet should be 2500–2700 kcal; depending on the individual characteristics and type of activity of the patient, the energy value may decrease or increase slightly.

Recommended methods of cooking: boiling with steam or water, baking in foil or in a special bag in the oven, stewing. Fried, fatty, spicy and salty foods are strictly excluded, as they increase the production of pancreatic secretions, which is undesirable in case of pancreatic diseases. The food you eat should be warm; consuming very cold and hot foods and drinks is contraindicated. The diet is divided, food should be taken 5-6 times a day, in small portions, preferably at the same time every day, overeating is unacceptable.

For chronic pancreatitis, you can eat steamed vegetables.

  • low-fat fresh dairy and fermented milk products (non-sour cottage cheese, fermented milk drinks, sour cream, and in dishes if tolerated, cream for adding to dishes, milk sauces, low-fat and mild cheeses);
  • meat and poultry of low-fat varieties in the form of cutlets, meatballs, quenelles, soufflés, in stews, in boiled pieces, you can eat veal, rabbit meat and lean chickens;
  • low-fat varieties of fish in boiled form, in the form of cutlets or aspic;
  • soups cooked in a weak secondary broth or vegetarian, it is recommended to give preference to pureed soups;
  • vegetables that do not contain coarse fiber in boiled, baked or mashed form, salads from vegetables boiled in water or steamed (potatoes, cauliflower, beets, broccoli, pumpkin, zucchini, green peas);
  • ripe non-acidic fruits and berries, it is allowed to eat them raw, pureed, in the form of compotes, jellies, mousses, soufflés (when preparing dishes, you must use as little sugar or sorbitol as possible);
  • eggs in the form of omelettes, no more than 2 whites and 1 yolk per day (the eggs used in cooking must also be taken into account);
  • butter no more than 30 g per day, 1–2 tbsp. spoons per day;
  • drinks (tea with xylitol, lemon or milk, herbal teas, rosehip decoction, if tolerated, non-acidic fruit and berry juices are allowed, always diluted with water, mineral waters only as prescribed by a doctor).

Foods and dishes that should be excluded for chronic pancreatitis

  • rye and fresh white bread, baked goods, puff pastry products;
  • soups with strong meat and fish broth, mushroom broth, as well as milk and cold soups, such as okroshka or beetroot soup;
  • fatty meats and poultry, offal, pates, canned food, sausages, smoked meats, fatty fish, salted fish, caviar;
  • fatty and sour dairy products, especially those high in sugar;
  • eggs, hard-boiled and fried;
  • sauces based on mushroom, meat or fish broth, tomato sauce, ketchup, mustard, spices and herbs;
  • crumbly porridges; pearl barley, millet, corn and barley groats are rarely allowed;
  • vegetables containing coarse fiber (white cabbage, turnips, radishes, bell peppers, eggplants), as well as legumes, mushrooms, onions and garlic;
  • ungrated raw berries and fruits, excluding grapes, bananas, dates, figs;
  • chocolate, jam, ice cream, confectionery, especially with fatty creams and cream;
  • coffee, cocoa, grape juice, carbonated drinks, alcohol.
