  • 300 milliliters of sparkling water;
  • 200 grams of flour;
  • 30 grams of granulated sugar;
  • 200 milliliters of boiling water;

The “highlight” of this recipe is the ability of carbonated water to loosen pancake dough due to the release of carbon dioxide, with which it is saturated, when heated. As a result, the pancakes will turn out porous, as if we had added soda or baking powder to the dough. Pancakes with mineral water without gas will turn out exactly the same as with plain water, except that they are richer in mineral composition, if you believe the water manufacturer :) It is practiced to make pancakes with mineral water with the addition of milk, eggs, fat, or with water alone, without baking, absolutely lean , about which we will inform you separately. Today we are preparing pancakes with milk, fat and eggs, simply taking advantage of the leavening properties of soda. Naturally, we choose highly carbonated water.

  • It will turn out: 12-15 pancakes of standard size and thickness

sparkling water (mineral or purified drinking water) – 300 ml

flour - 1.5 cups, according to dough consistency

sugar – 1 – 1.5 tablespoons or to taste

refined vegetable oil – 1-2 tablespoons per dough

vegetable oil or fresh lard - for frying pancakes

butter – for greasing prepared pancakes

1 Use mineral water at room temperature, heat the milk to 35-40 degrees.

2 Beat eggs with a mixer or by hand with salt and sugar, add milk, vegetable oil, mix, add sifted flour and stir so that there are no lumps left.

3 Leave for 10-15 minutes. to allow the flour gluten to “disperse” and swell.

4 Then gradually add mineral water, diluting the dough to a consistency reminiscent of thick cream. We don’t pour all the water at once - during the process of frying pancakes, the dough tends to thicken due to the settling of flour, so it is better to add the remaining water gradually, diluting the dough to the correct consistency, at the same time maintaining its “bubbly” quality :)

5 Thoroughly heat the pancake pan, grease it with vegetable oil (using a silicone brush, or dipping half a clean potato tuber, pricked on a fork, into a bowl of oil) or a piece of fresh lard.

6 Pour the batter into a hot frying pan by the ladle, shaking it from side to side to spread the batter evenly and fry the pancakes until browned on one side first.

7 Then we turn it over to another. You will need a comfortable flat spatula. We adjust the degree of heating intensity when frying pancakes as the process progresses, focusing on the speed of frying and the visual result - the pancakes should be evenly and appetizingly browned :)

8 The amount of dough that should be put into the ladle for each pancake is also determined based on the size of the frying pan and the thickness of the pancakes that suits you. If you would like thinner pancakes, simply add more water to the batter and pour just enough batter into the pan to cover the surface with a thin layer. To make the pancakes thicker, do not thin the dough too much and pour it in a thicker layer. In all cases, mix the dough well before pouring the next pancake.

9 If the pancakes don’t come off too well, add a little butter to the dough – as a rule, it helps :)

10 Stack the finished pancakes on top of each other, spreading them with butter if you plan to eat them on their own. If you are going to stuff them or form them into rolls with any fillings, it is not necessary to coat them with oil. By the way, pancakes intended for stuffing can be fried only on one side, on which we will put the filling, and fry the second side already stuffed before serving - this saves time :)

As you can see, the pancakes turned out thin, tender, and porous. We didn’t brown the pancakes too much, since we are going to prepare rolls with salmon and red caviar based on them, but that’s a separate, very tasty story :) If you cook pancakes in mineral water without adding milk, the result will be basically no worse, but the taste will be poorer.

  • The right dishes. To prepare the dough, it is better to use deep dishes. This makes it more convenient to “use” a whisk or immersion equipment for mixing.

Milk dough for pancakes

This soda pancake recipe uses water in equal proportions with milk. The amount of flour is approximate, since you need to judge by the thickness of the dough: it should resemble store-bought kefir.

Much depends on the quality of the flour and the fat content of the milk. If the dough seems a little liquid to you, you can add more flour to it, but if you would like thin pancakes to come out, try not to add too much.

You will need:

  • milk - 300 milliliters;
  • gas water - 300 milliliters;
  • egg - 1 piece;
  • sugar - 2 tablespoons;
  • salt - 0.5 teaspoons;
  • butter - 40 grams;
  • flour - about 250 grams.

Preparation

  1. Mix the egg with milk.
  2. Pour in soda, granulated sugar, salt and mix everything.
  3. Melt the butter (can be done in the microwave) and combine with the dough.
  4. Add flour in portions, while kneading the dough and observing its structure.
  5. Pour it into a hot frying pan using a ladle, quickly spreading the liquid over the bottom.
  6. Stack the items.

On slightly carbonated water

These pancakes are made without milk, with slightly carbonated water. Don't let the lack of milk bother you - the dish turns out very tasty. You can cook these pancakes in a frying pan without oil, since sunflower oil is included in the dough. They are soft, turn over well and don't tear.

You will need:

  • lightly carbonated water - 0.5 liters;
  • egg - 5 pieces;
  • salt - 1 teaspoon;
  • sugar - 4 teaspoons;
  • soda (slaked) - half a teaspoon;
  • flour - 300 grams;
  • sunflower oil - 5 tablespoons.

Preparation

  1. Mix mineral water, beaten eggs, granulated sugar, salt, soda.
  2. Add flour and achieve homogeneity of the mass.
  3. Heat the frying pan and bake.

Mineral water pancakes will be of the highest quality in a thick-walled cast iron frying pan. It will heat up evenly, and baking will go faster, without burning.

On highly carbonated water

This soda water pancake recipe uses butter to keep the pancakes from sticking to the pan while baking. The mass should be fluid, but at the same time slightly viscous, like quite thick sour cream.

You will need:

  • table mineral water (strong carbonation) - 500 milliliters;
  • flour - 200-250 grams;
  • eggs - 5 pieces;
  • butter (75% fat) - 70 grams;
  • Sunflower oil, refined - 50 grams;
  • salt - 5 grams;
  • sugar - 10 grams.

Preparation

  1. Beat the eggs, add salt and granulated sugar.
  2. Pour in a fifth of the soda and continue stirring.
  3. Add flour, whisk so as to avoid the formation of lumps.
  4. Melt the butter (in the microwave or steam), cool slightly, and gradually add to the dough. Meanwhile, continue whisking.
  5. Gradually pour in the rest of the mineral water. When the mixture becomes less thick, start beating more slowly.
