3 recipes for cottage cheese casserole with starch for a slow cooker and oven

Starch in a casserole is an important ingredient, being an interchangeable product of semolina and flour in a dish. Its job is to absorb excess liquid and bind the dough; this way the casserole will be dense, but soft and will not crumble when taken out. To make the casserole less high in calories, do not use low-fat cottage cheese - this will make the dish not entirely appetizing. It is better to replace sugar with stevia, and take corn starch - it takes longer to be absorbed by the body.

The benefits of starch

Starch is the result of processing rice, corn, potatoes and some cereals and has high nutritional value. Due to its ability to absorb excess liquid, giving the dish looseness and airiness, the product is successfully used in casseroles, bread, muffins, as well as sauces, meat and fish dishes (as a breading ingredient). He also:

  • has the ability to create the effect of a full stomach, as well as slow down the absorption of sugar, due to which it is successfully used in the nutrition of diabetics;
  • due to the content of unrefined carbohydrates, it has antitumor properties;
  • normalizes digestion and helps in the treatment of stomach ulcers.
  • reduces blood cholesterol levels;
  • removes excess water from the body.

All of the above properties relate to the “healthy” starch contained in legumes and grains, while potato and rice are quickly absorbed by the body, turning into glucose and then into fat. It is not recommended to add the product to very hot liquid, otherwise it will quickly lose its valuable properties.

Perhaps some of you remember casseroles from the school cafeteria or kindergarten. As a rule, it was a wet and flat substance. But cottage cheese casserole in a slow cooker is the exact opposite of official baking. See for yourself - what a delicious and airy beauty! But this is dessert. If you want something more serious, we recommend trying it, also cooked in multi.

Do you want to cook the same? Nothing could be easier! This is a mix and bake recipe. There are no complications or secrets; even a novice housewife can handle it.

In addition to the multicooker itself and the ingredients, you will need a mixer and a blender (if you have two in one, great) to thoroughly chop, beat, and mix. Of course, all this can be done manually: grind the cottage cheese through a sieve and beat the whites with a whisk, but in this case the recipe will no longer be so simple.

Ingredients for cottage cheese casserole

  • 400-440 g of cottage cheese (I bake with five percent);
  • 150 grams of sour cream;
  • 1.5 multi-cups sugar;
  • Banana;
  • 5 eggs;
  • 3 tablespoons starch;
  • Vanillin
  • 1 teaspoon baking powder.

Banana is an optional ingredient in this recipe., we just really like how it combines with cottage cheese. Therefore, we strongly recommend adding banana to the casserole, although you can cook without it.

In general, this recipe encourages creativity. You can add a little cinnamon, ground nutmeg and even dried ginger to the casserole. The casserole will be no less tasty if you add a little cocoa. And thanks to the whipped whites and the complete absence of flour, the airy pastries are very similar to a delicate soufflé that melts in your mouth. However, first things first.

Knead the dough

First, separate the egg whites from the yolks. We will beat them separately to make a fluffy foam, so it is better to remove the eggs from the refrigerator in advance. Warm whites rise much faster.

Well, put the yolks in a separate bowl, add cottage cheese, peeled and cut into pieces banana, sour cream, starch, vanillin and grind all the ingredients using a blender to a homogeneous smooth mass.

Now that the main ingredients are well mixed and an airy curd mass is obtained, we put the blender aside, arm ourselves with a mixer and begin to beat the whites, gradually adding sugar.

I put one and a half multi-cups, but if you need a low-calorie or children's casserole, it is better to add less sugar, and buy low-fat cottage cheese.

You need to beat the whites until stiff peaks form. What does it mean? Look at the photo. If you use a spoon to make a mound on the surface of the protein and it does not disappear, the job is done!

When you get such a thick and fluffy foam, carefully mix it with the curd mass. At this moment, you should not use a mixer or blender. Add the protein manually, in small portions, carefully mixing with a spoon from top to bottom.

While the “dough” has not settled, quickly grease the multicooker pan with butter so that the casserole does not stick to the walls. Carefully pour in the curd mixture.

How to bake cottage cheese casserole in a slow cooker

Select the “Baking” program and set the time. Cottage cheese casserole in a Panasonic multicooker takes 65 minutes to prepare. And in more powerful models (for example, in our Polaris PMC 0527D), in 60 minutes the bottom and sides of any baked goods are covered with a very golden brown crust, which may not appeal to everyone.

Some people like their baked goods crispier, others paler. And if you are familiar with the features of your multicooker, you can determine the cooking time yourself, depending on the family’s preferences, from 50 to 65 minutes.

But the most important thing is that after the end of the program, do not open the multicooker lid under any circumstances. The baked goods must cool completely!

This rule applies to any baked goods made from cottage cheese, and especially to an airy casserole, which, due to a sharp temperature change, can crack and settle. This, of course, will not change the taste, but you will agree that it is much more pleasant to serve a beautiful and even casserole to the table.

When the casserole is lukewarm, remove it from the pan using a plastic steamer. Now you can cut a piece, sprinkle it with powdered sugar, decorate with berries, jam or mint. If you make homemade yogurt, be sure to put a spoon on top, these two delicious things go together perfectly. And bon appetit. Delicate casserole with berries without flour

Using a mixer or blender, mix 3 pieces until smooth. eggs and 0.5 tbsp. sugar, gradually adding 3 tbsp. l. semolina and 400 g of cottage cheese. Three zests of one lemon and add 0.5 tsp. soda and one pinch of salt, 1 packet of vanilla sugar. Let the dough sit for 15 minutes until the semolina swells and the cottage cheese reacts with the soda. Grease the multicooker bowl generously with 1.5 tbsp. l. butter and spread the dough, covering the top with any frozen berries (200 g). We wait 1 hour for baking.

One of the secrets of this recipe is the need to cool the casserole right in the pan. Otherwise, the masterpiece may settle and lose its beautiful appearance.

Fluffy from homemade cottage cheese

Using cottage cheese made at home makes it possible to enjoy the most delicious casserole. And besides, useful. In order for the baked goods to be fluffy and airy, you need to beat the egg whites with a mixer separately from the yolks.

So, take 5 eggs, separate the whites and yolks into two deep bowls. First beat the whites until stiff peaks form, gradually adding 160 g of granulated sugar. Using a blender, begin to beat the yolks until smooth, after adding to them 500 g of cottage cheese (homemade), 250 g of sour cream and 3 tbsp. l. starch (corn or potato). Gradually add the white mixture to the yolk mixture, stirring gently with vertical movements. As a result, you should have a homogeneous, very fluffy, oxygenated dough. Carefully pour the tender dough into a generously oiled multi-cooker. In the “baking” mode, we set the baking time to 60 minutes. After finishing baking, the process of preparing a curd masterpiece is incomplete. The casserole should cool in the multicooker with the lid closed.

Bon appetit!

A little about the benefits and composition of cottage cheese

If we are talking about the benefits of cottage cheese, then first we need to say what kind of cottage cheese it should be. Natural cottage cheese This is a highly balanced product, valuable in terms of its content of useful substances, which is obtained by fermenting milk, and then the resulting mass is divided into cottage cheese and whey. This natural product lasts no more than 3 days. This is exactly the kind of product that benefits our body. However, in pursuit of profit, manufacturers produce “curd masses”, which sometimes have nothing to do with cottage cheese. Typically add Palm oil, which is purchased in tanks in tropical countries for pennies, and often the palm is of far from the best quality. In addition, to increase the mass fraction of the curd product, starch can be added. And for even better “benefits”, synthetic sweeteners and flavoring additives, hardeners (for example calcium chloride), preservatives. This way, you get a more high-calorie, and less healthy product (or even harmful) than real cottage cheese. Study the ingredients on the packaging, don’t be lazy.
