I’ll tell you in advance, I’ve never tried making it with any other cheese, only with hard varieties. In this recipe I used leftover three cheeses.

It’s better to sift the flour so that there are no lumps, etc.

We take softened butter. There is no need to heat it, but take it at room temperature, soft.

Three cheese on a fine grater. This time I had pieces, threw them into a blender and ground them perfectly into crumbs.

Combine everything in a bowl.


And now we carefully rub everything with our fingers, getting these crumbs. Rake from below, grind, there should be no separate “islands” - no flour, no butter, no cheese.



I always roll it out directly on baking paper. In this case, everything is very easy to transfer to a baking sheet.
Roll out thinly, the dough should be 2-3 millimeters thick, no thicker!

At the same time, turn on the oven, it should be heated to one hundred and eighty degrees.

Transfer the dough to a baking sheet and cut into portions. I do this with a pizza cutter.

Now you can salt them a little. Just on top, over the entire area, a little. Personally, despite the large amount of cheese, I need salt there.

Place in the oven for about seven to ten minutes (don’t forget, it must be well heated!). The time depends on the thickness of the dough and the specific properties of your oven.

The cheese crackers should be nice and lightly browned.

You can sprinkle them with caraway seeds, poppy seeds, sesame seeds, any dry herbs - use whatever you want.

If you have a high-speed blender at your disposal, then use it, otherwise you can do it with an ordinary knife. However, in our case it turned out that a cutting board paired with a special knife is ideal for chopping butter and flour.

The technology for preparing crackers differs from the technology for kneading shortcrust pastry only in the presence of cheese in the composition; otherwise, the same rules should be followed: all components and necessary equipment must be cold. Ideally, place the cold butter, water and knife in the freezer 10 minutes before you start cooking.

Process the butter and flour into fine crumbs. If the cheese is not salty enough, add a pinch of salt to the flour at this stage. You can add your favorite dried herbs and spices.

Add your favorite hard cheese to the butter crumbs, after finely grating it. Chop all the ingredients together again.

Pour the crumbs onto a work surface and add no more than a couple tablespoons of ice water. It will help combine the ingredients.

Wrap the dough in cling film and leave in the refrigerator for 20 minutes.

Roll out the rested dough into a layer about 3 mm thick. Using a knife or a special cutter, cut out the crackers.

Discard excess dough, gather it together, roll it out and cut again. Repeat until you have used up all the dough.

Place the crackers on a parchment-lined baking sheet and bake at 170°C for 12–15 minutes.

Ingredients:

  • 120 g flour;
  • 200 g hard cheese;
  • 2 tablespoons cold water;
  • 60 g butter.

Preparation

  1. Using a knife, turn the flour and butter into crumbs.
  2. Add cheese and chop all ingredients again.
  3. Pour in cold water and gather the dough into a ball. Wrap it in film and leave it in the refrigerator for 20 minutes.
  4. Roll out the dough into a layer 3 mm thick and cut.
  5. Bake the crackers at 170°C for 12–15 minutes.

Crumbly, dry cookies - crackers are baked with various additives: salt, sugar, honey or nuts. It goes perfectly with tea, coffee, milk. And also for preparing a wide variety of snacks and sandwiches. I have a cracker version with cheese. These cookies are often prepared with salt, but this time I made them with a neutral taste.

We will need the following products: butter, any hard cheese, egg, flour and if you want a saltine cracker, add salt.

To knead the cracker dough, pour flour into a bowl.

Grind the cold butter on a grater and add it to the flour.

Then mix until crumbs form.

Grate any hard cheese and add it to the bowl with flour and butter. Mix.

Break one raw egg and place it in the dough.

The main condition for making a good cracker is to quickly knead the dough so that it turns out crumbly. Therefore, we quickly collect the dough into a ball and refrigerate for one hour. Let me remind you again: for a saltine cracker, add 0.5 teaspoon of salt to the dough.

After an hour, take the dough out of the refrigerator and knead again until it becomes more homogeneous. Divide the dough into two parts and roll each into a circle. Cut the circle into segments.

Then we make holes in each segment. I used a ballpoint pen without a refill, but you can use a wide cocktail tube.

Place the cracker on a baking sheet with baking paper and place in the oven, preheated to 165-170 degrees C.

Bake for 30-35 minutes until done.

Serve the prepared cracker for tea, coffee or beer.

Beat the cooled butter until soft and creamy.

Then add the pre-grated cheddar cheese and stir in the butter.

Add two tablespoons of ice water, stir and form into an elastic dough.

Wrap the finished dough in plastic wrap and chill for one hour in the freezer.

Place the dough on parchment paper and roll out into a layer 4-5 mm thick.

Cut the rolled out chilled dough into small squares or diamonds.

Using a regular toothpick, prick each figure. And to add a salty taste, dilute a small amount of salt in water and brush the surface of the crackers with a brush.

Transfer the parchment sheet with all its contents to a baking sheet, preheat the oven to 190 ° C and bake for 15 minutes until the surface of the cookies is noticeably browned.

When ready, remove the baking sheet from the oven and wait until it cools completely, after which the homemade crackers with cheese will become crispy and incredibly tasty.
