And we want to offer you an unusual recipe - lemon pancakes with condensed milk. Lemon juice and zest are added to the dough, giving the flatbreads a subtle citrus aroma and sourness that compensates for the sweetness of the condensed milk. Soda is used as a leavening agent, which is quenched by the same lemon juice and is not noticeable in the finished pancakes. In addition to juice, we will add lemon zest to the dough, which will significantly improve the taste characteristics of the pancakes, give them aroma and emphasize their delicate taste.

The result is tender, soft pancakes with a fluffy and light structure reminiscent of a sponge cake. Be sure to try it, you won’t regret it!

  • condensed milk – 1 can
  • egg – 1 pc.
  • wheat flour – 150 g
  • small lemon – 1 pc.
  • sunflower oil – 1 tbsp. l.
  • baking soda – ½ tsp.
  • salt - a pinch.

  • Refined sunflower oil.

Cooking pancakes with condensed milk, recipe.

1. Pour the condensed milk from the can into a bowl. Beat the egg and add salt. Beat with a mixer.

2. Wash the lemon thoroughly and, of course, with hot water to remove the wax coating, which is extremely harmful to health. After all, it’s no secret that citrus fruits are coated with wax for an attractive appearance and ease of transportation. Using a carving knife, remove the thin top layer of yellow zest from the lemon.

3. Then cut the citrus in half and squeeze the juice from both halves directly into the bowl. Add zest. Stir.

4. Pour in 1 tbsp. l. sunflower oil.

5. Sift the flour and mix with soda. Add to bowl. Knead the dough using a mixer. Evaluate the resulting dough: it should be free of lumps of flour and have the consistency of thick sour cream.

6. Let the dough rest for 15 minutes.

Place 1 tbsp. l. dough into a frying pan greased with sunflower oil and bake the pancakes over very low heat so that they are fluffy and do not burn.

7. Before adding the next batch of pancakes to the pan, grease the pan again with oil.

Serve lemon pancakes with condensed milk and sour cream. An excellent accompaniment to this dish would be a cup of aromatic freshly brewed tea or a glass of milk.

Note to the owner:

If you don't have a carving knife in your kitchen, use a grater with small holes to remove the zest from the lemon.

First you need to prepare the dough. In one bowl, mix the egg with sugar, add a little salt. The mass is intensively whipped with a whisk until a light foam appears.


Add half of the kefir to the egg mixture and add baking soda, which can be quenched with vinegar, although kefir also neutralizes it. Mix the base for the future test. Add flour little by little into the bowl and stir constantly until the dough is homogeneous.

When it is clear that all the lumps have disappeared, you can add the rest of the kefir. All that remains is to stir thoroughly so that the dough resembles thick sour cream in its viscousness.

It's time to start baking pancakes. Heat oil in a frying pan. Spoon out the dough.

Quickly, before the top has time to set, place the filling from the prepared boiled condensed milk in the center of each flatbread. Choose for yourself what portion you will send inside.

After 2-3 minutes, turn the pancakes over to the other side and fry until done.
