I suggest you make a honey cake with prunes. I really like to use prunes in salads and with meat, sometimes I cook borscht with prunes and also add it to baked goods. I have long wanted to try a cake with prunes, so I decided to bake this Honey Cake.

What can I say... the cake turned out very tasty, which I, in fact, had no doubt about! The most difficult part was spreading the dough onto the parchment - for me it is more difficult than just rolling out the dough. Well, it’s okay, I did it, because once upon a time I had to try this method.

Place honey, eggs, sugar, baking soda and baking powder in a bowl. Beat the mixture with a whisk for 3 minutes.

Remove the bowl from the water bath and add flour, stir well.

The mass should become homogeneous and remain warm.

Draw circles of the desired diameter on parchment in advance. Mine is 21 cm. Spread the warm dough on parchment along the contour. Approximately 2 tbsp. test. It is advisable to spread all the cakes at once while the dough is warm - it is impossible to spread cold dough.

Preheat the oven to 180 degrees and bake the cakes for 5 minutes.

I baked double the amount for the cake. I left one layer for sprinkling the cake.

I decided to make curd and sour cream for this cake. To do this, place soft cottage cheese and sour cream in a blender, beat, gradually adding sugar and vanillin.

Cut the prunes into pieces.

Level the cakes a little if unevenness appears during baking. Place the cakes on a plate, brush each with cream and sprinkle with prunes.

In this way, assemble the entire cake and cover it with cream.

Grind one cake and trimmings into crumbs, you can also add walnuts. Sprinkle over the entire cake.

“Honey cake” with prunes is ready! You can decorate the cake with prunes, nuts and chocolate - at your discretion. The cake should soak in the refrigerator for several hours.

But what if you deviate from the standard of preparing a cake and supplement it with some other ingredient, for example, prunes. Then the taste of the cake will open up and “play” in a new way.

for the cakes:
- margarine - 100 gr.;
- sugar - 1 glass;
- egg - 2 pcs.;
- honey - 2 tbsp. l.;
- soda – 2 tsp;
- flour – 3 cups;

for cream:
- sour cream – 0.5 l.;
- sugar – 1/3 cup;
- prunes – 300 gr.

Cooking time: 2 hours.
The ingredients are for a cake with a diameter of 25 cm.

Prepare the crust dough first.




Combine eggs and sugar in a container.




Beat them with a mixer or whisk.




Add softened margarine.






Soda and honey.




Mix everything and place in a water bath for 15 minutes.




During this time, the mass should approximately double.




Remove the container from the bath and add flour.






Knead the dough and form it into a ball.




Then divide it into 7-9 parts.




Roll each part into a layer with a rolling pin. Place a plate or pan lid of a suitable diameter on top and cut off the excess dough.




Place the cakes and remaining dough on a baking sheet sprinkled with flour.




Bake the cake in an oven preheated to 180⁰C for 5-10 minutes (depending on the special oven) until golden brown.
Cool the cakes.




Meanwhile, prepare sour cream. To do this, combine sour cream with sugar.
Beat with a whisk or mixer. Set aside 1/5 of the cream.




Cut the prunes into small pieces.




Add it to sour cream.




Apply prune cream to the cooled cakes.




Grind the baked dough scraps into crumbs using a blender.




Use the reserved portion of the cream without the prunes to grease the top and sides of the cake. Sprinkle crumbs over the cake.
Place it in the refrigerator for several hours, or better yet, leave it overnight to soak.

Beat five eggs until white with a glass of sugar and a bag of vanillin. Add 300 g of sour cream, a can of condensed milk, a spoonful of soda. Stir and add three cups of flour. It is best to divide the resulting mass in two. Mix three tablespoons of cocoa powder into one of the parts. We bake the cakes one by one (half an hour at one hundred and ninety degrees). We cut each of them into two parts. For the cream, grind a glass of walnut kernels and 200 grams of steamed pitted prunes. Beat half a liter of sour cream with sugar (add to taste) until fluffy. Add nuts and prunes, stir. Preparing the impregnation. Brew a cup of strong coffee, add two tablespoons of cognac. Now we assemble the sour cream cake with prunes and walnuts. The recipe calls for soaking all the cakes and covering them with cream. Alternate white and dark layers. The chocolate cake should be on top. Decorate the top of the product with glaze and remaining cream.

Shortbread dough

This is a very original recipe. Homemade cake with prunes and walnuts consists of round cookies, inside of which there are walnuts instead of pits. Grind margarine (three hundred grams) with a glass of sugar, add three eggs and beat. Place a spoonful of soda dissolved in vinegar and begin adding flour. It may take four cups to knead an elastic dough. We divide it into thirty identical balls. We put inside each berry a pre-soaked prune, into which we have already inserted a quarter of a nut kernel. Line a baking sheet with oiled paper and lay out the balls. Bake in a preheated oven at one hundred and ninety degrees. Beat a liter of sour cream with two glasses of sugar. Dip the cooled shortbread cookies into this cream and place them in the shape of a pyramid. To make the structure more stable, coat the sides of the cake with the remaining sour cream and pour melted chocolate over it.

Economical recipe: “Pancho” with prunes, sour cream and walnuts

We start work by turning on the oven. In a deep bowl, beat the egg, a glass of sugar and a bag of vanilla. In a cup of kefir, quench half a teaspoon of soda. Pour into the egg mixture. Beat again with a mixer. Add a glass of sifted flour in portions. Gently knead the dough with a wooden spatula, always working it from the bottom up. The form in which we will bake needs to be greased and then lightly powdered with flour. This is where we pour our dough. Then we put the mold in a hot oven and bake for about twenty-five minutes at 180 C. While the biscuit is cooling on a wire rack, let’s make the cream. Steam two hundred grams of prunes, remove the pits and cut them into pieces. Beat four hundred grams of fat sour cream and half a glass of sugar. Let's add prunes. Cut the biscuit into two layers. Cut one of them into small cubes and mix with cream. Line a dome-shaped bowl with cling film. Spread the cream. Cover the top with the whole cake. Then you need to wrap the product with something on top (for example, cling film) and put it in the refrigerator for six hours, or even overnight. Crush the walnut kernels with a rolling pin. Sprinkle them on the sides and top of the product. The recipe recommends decorating a cake with prunes and walnuts with chocolate glaze.

Biscuit "Truffle"

Grind four yolks with one hundred and fifty grams of sugar. Beat the whites into foam. Melt two hundred grams of milk chocolate. Put a stick of butter in it and rub it. Add yolks and one hundred grams of chopped nuts and prunes into the chocolate mass. Mix, add one hundred and fifty grams of flour and a bag of cookie powder. Carefully fold in the whipped whites. Pour the liquid into a mold lined with parchment. Place in a hot oven and bake for half an hour at 180-200 C. Cut the cooled sponge cake into two layers, soak it. Heat a glass of milk, dissolve one hundred grams of chocolate in it and bring to a boil. Grind three yolks with a spoon of sugar and a pinch of vanillin. Add a handful of flour. Honey cake

The dough for this pie must be prepared in advance. It should stand in the refrigerator for at least six hours. To bake such a cake with prunes and walnuts, the recipe suggests mixing a glass of honey, two eggs, one hundred grams of butter, two hundred grams of sugar and a spoonful of soda in a saucepan and placing it in a water bath. You need to constantly stir the mass. After seven minutes, when it becomes homogeneous, remove the saucepan from the heat and add three hundred and fifty grams of flour. Mix the dough and put it in the refrigerator. Let it come to room temperature before baking. We cover the mold with parchment and put three or four spoons of the resulting dough there. Then we distribute them over the entire diameter. We bake each cake for five minutes at 180 C. Now we assemble the honey cake with prunes and walnuts. We coat the cakes with sour cream, to which we add chopped nuts and prunes. Decorate the top of the honey cake with boiled condensed milk or whipped cream, and the sides with crumbs.

Cake with prunes and walnuts “Curly Pinscher”

How to prepare this product with the original name? Soak a handful of prunes in water with the addition of three tablespoons of cognac. Mix the sour cream dough as in the recipe above. We bake the first cake. Add cocoa to the remaining dough. We bake that too. When the chocolate cake has cooled, cut into cubes. Beat half a liter of sour cream with a glass of powdered sugar. Mix with chopped prunes and a handful of crushed nuts. Add pieces of chocolate cake there. Next, we proceed as in the “Pancho” recipe: cover the bowl with cling film, lay out the cream, and cover with white cake. We soak it with cognac liquid left over from the prunes. Place in the refrigerator for half an hour. Turn over and remove the film. Decorate homemade cake with prunes and walnuts with icing or sour cream with gelatin.

  • Mix honey with sugar and soda, pour in eggs and add butter. Place the mixture in a steam bath and, stirring constantly so that the eggs do not cook, wait until the sugar and butter dissolve. Add flour to honey mixture and stir. Cool by covering with film and refrigerating for 10–12 hours. Then take the dough out of the refrigerator and leave it at room temperature for another 4 hours.
  • Line a baking tray with baking paper and lightly grease it with oil. Place the edge of the springform pan on the paper and pour 2 tbsp inside the edge. l. test. Spread it thinly. Place the pan in the oven for 7-10 minutes depending on the oven power. Baking temperature – 180 degrees.
  • Take out the golden-colored cakes, cut them in circles and take them out along with the paper. Leave to cool. Bake the remaining cakes, there will be 5 pieces in total. Bake one of the cakes longer until it turns dark brown. Grind this cake in a blender until crumbly. For the cream, beat sour cream and sugar. Separately, whip the cream to a strong foam and carefully combine with sour cream.
  • Chop the walnuts and chop the prunes into small pieces. Place cakes coated with cream on a flat dish, placing nuts and prunes alternately on top of the cream. Sprinkle the last cake with nut crumbs. Sprinkle the sides of the “Special” honey cake with crumbs mixed with nuts.

Honey cake with prunes and sour cream is a great opportunity to diversify the range of your favorite sweets. How to make it tastier? Of course, add some zest. We will have prunes as a highlight. Let's try it, I guarantee it will be an incredible combination that everyone will love.

Making a cake with honey layers is not such an easy task. He will have to devote a lot of time without being distracted by other things. Unlike other cakes, which usually have no more than three layers, a honey cake has at least six, and often eight or more. However, baking a large number of cakes will take a little time. Each cake is baked for only a few minutes, and this time is barely enough to have time to remove the previous one and roll out the next one. It is better to cut the cakes as soon as you take them out of the oven - while the cake is hot, it is very soft and easy to cut to the desired size. Cooled cakes are fragile, brittle, but when soaked in cream, they swell and become very tender and airy.

Despite the labor intensity, I consider honey cake with prunes to be a fairly simple cake; it always works for everyone. The only difficulty is the sour cream. It is very important not to beat it, otherwise the sour cream will come out in grains and the cream will not work out. In order for the cream to whip well, it needs good sour cream, not too greasy and not very thick, but not runny either. The optimal fat content of sour cream from the store is 20 percent (sometimes they also write 21%, I don’t know why). The cream made from homemade sour cream turns out very tasty - it whips perfectly, the cream will be fluffy, airy, with a slight sourness. Prunes harmonize perfectly with this sourness. Some people add it directly to the dough, but I tried it and didn’t really like it. So I suggest simply putting pieces of prunes on each cake. Place chopped prunes on top of the cream layer.

Dough ingredients

  • 3 chicken eggs;
  • 3 tablespoons honey;
  • 100 grams of butter;
  • 500 grams of flour (possibly a little more - depends on the quality of the flour);
  • 1 heaped teaspoon of soda;
  • 1 cup granulated sugar.

Ingredients for cream and layer

  • 3 cups sour cream of optimal fat content;
  • 350 grams of sugar;
  • 1 packet of thickener for sour cream;
  • 150 grams of dried pitted prunes.
