In order to prepare a lean salad with beans and pickles, you will need canned or boiled beans. I soaked some beans overnight, then boiled until soft so that the beans retain their shape. Canned beans, of course, are ideal, simple and quick, but also more expensive.

I use unrefined corn oil.

In my opinion, such a salad is very, very good for adding variety to the lenten menu and not only. It is affordable and easy to prepare and perfectly complements the mass of main dishes.

Peel the onion and cut into small cubes, fry until translucent in vegetable oil. Add peeled and coarsely grated carrots. Fry everything together, stirring, until soft. Vegetables absorb oil very actively, so 2 tablespoons was enough.

Put the beans and pickled cucumbers cut into small pieces in a bowl.

Add fried and slightly cooled vegetables.

Dress the salad with vegetable oil, if necessary. I had enough oil, which was added during frying.

Salt, add chopped dill, mix. Lenten salad with beans and pickles is ready to serve!
