Although cranberries are healthy and do not cause allergies, you should still refuse to use them.

  • with peptic ulcer of the stomach and 12 duodenal ulcer,
  • with low blood pressure.

During pregnancy and while breastfeeding, you need to be careful and it is better to consult a doctor about the need for its use.

Cranberry storage

It has already been noted that cranberries keep well enough. But not for a very long time. If you have a lot of cranberries, then in winter it can be taken out in the cold, it will freeze and will be perfectly preserved until spring. If it is not possible to store it in the cold, then we put it in plastic bags or containers, and then store it in the freezer.

Cranberries can be ground in a meat grinder or blender and put into clean, dry jars. With or without sugar - ground cranberries are perfectly stored, do not deteriorate, even under nylon lids.

Useful properties of dried cranberries

Dried berries are more high-calorie and the concentration of nutrients in such a berry. And what is surprising: the dried berry is sweeter in taste, since during drying, the sugars thicken and the sourness disappears. And yet such a berry can be consumed with low acidity of the stomach.

When using dried berries,

  • improves physical and mental performance, endurance ,
  • normalizes digestion,
  • acidity in the stomach increases with its decrease.

How to dry cranberries at home? There are several easy ways.

On air. An ancient method used by our ancestors. Peeled berries are laid out in one layer on a baking sheet lined with a towel or paper, you can use trellised pallets. To make the berries dry faster, they are blanched before drying or simply cut into halves. Dry in a ventilated area. Turn the berries daily so that there is uniform access of air to the berries.

In an electric dryer. Place the blanched berries on a cloth or paper to absorb excess moisture and place in the dryer.

In the oven. Place the blanched berries on a baking sheet lined with paper in a single layer. It is better to put the baking sheet on the lower level, so the berries will dry better. Set the temperature first to 40º, after the berries are slightly wilted, increase the temperature to 70º.

In the microwave. You can, of course, use this method, but keep in mind that many useful properties can be lost in the microwave. The process is the same as in the oven, but the drying time can be reduced to 3-5 minutes.

Frozen cranberries - useful properties

Now everyone knows how to freeze cranberries for long-term storage. But the question arises: are the beneficial properties of the berry lost when frozen?

I must say right away that when frozen, the beneficial properties of cranberries do not disappear. Even more than that, with proper freezing, they are even more intensified. The main thing is to do it right. Whole, not crushed berries are selected for freezing. It is not necessary to wash them before freezing, you just need to remove the leaves and moss, if any.

Clean berries are laid out in containers or plastic bags and stored in the refrigerator. At a constant temperature, the beneficial properties of the berry can be preserved for 2-3 years.

The berries should be defrosted gradually at room temperature. Never use a microwave to defrost.

The use of cranberries in cooking

The most popular cranberry in the form of cranberry juice and jelly. How easy and quick to cook them, read on for cooking recipes.

Cranberry juice - how to cook

Cranberry juice is an old Russian drink made from cranberries.

In the pan with a vault, add the cranberries sorted from garbage and washed cranberries. Bring to a boil, but do not boil, so that the existing vitamins do not collapse during boiling. Remove from heat and strain the berries through a colander or large strainer. The husks from the berries can, of course, be boiled once more. But I don’t do that, I throw away all that is left of rubbing. Add granulated sugar to taste, bring to a boil.

With colds, it is better to drink such a fruit drink hot. Then you will definitely sweat, all the excess will come out of the body. With such diseases, it is recommended to drink cranberry juice as much as possible. The more you drink it, the faster all toxic microbes are washed out of the body, the faster the intoxication syndrome will pass.

Drink more cranberry juice, but not hot, with a hangover.

Cranberry jelly

First, we prepare cranberry juice according to the recipe that is written above. While it boils, in the meantime, prepare the starch.

2-3 tablespoons of potato starch (potato starch is better, not corn starch) are diluted with water at room temperature, mix thoroughly.
Bring cranberry juice to a boil and, continuously stirring with a spoon, add starch diluted in water to the juice. Bring to a boil again and immediately turn off the stove. Kissel is ready. It is better to drink it warm or cold.

Filling for cheesecakes

Grind cranberries in a meat grinder or blender, add sugar. Just before stuffing the cheesecakes add wheat flour to the ground cranberries. To stir thoroughly. We achieve the consistency of thick sour cream.

Why is it better to add flour? Flour during baking is "baked" and does not spread. If we add starch to the ground cranberries, then it boils and spreads during baking. And the finished cheesecakes have a very unpresentable look.

Dear readers, I hope you enjoyed the story about cranberries and its beneficial properties and cooking recipes. Let you always have cranberries and then you will not be afraid of a cold, and your immunity will always be at its best.

In folk medicine, cranberries are often used, its beneficial properties and contraindications are discussed in this article. It is sold in various forms - fresh, frozen, dried, dried. Dried and dried berries are easier to store, because this does not even require a freezer (as is the case with frozen ones).

Preparing a drink

Cranberry juice, the benefits and harms of which will be discussed below, retains all the medicinal properties of the berry and has a minimum of contraindications. Suitable for both children and adults, including pregnant women. For its preparation, fresh or frozen berries are used. How to do:

  • take 1 glass of berries;
  • thaw them if using frozen;
  • squeeze the juice out of them (do not use it yet);
  • add a third of a glass of sugar or honey to the peel of the berries (in case of diabetes, replace with a sweetener or exclude) and pour one and a half liters of water;
  • boil the mixture for 2-3 minutes over low heat;
  • cool and add juice to the composition.

The benefits of cranberry juice according to this recipe with or without honey are maximum. This is due to the fact that the juice does not undergo heat treatment and the vitamins contained in it are not destroyed during cooking (when boiling, vitamin C is destroyed up to 90%, vitamin B6 up to 40%). As a result, when the peel is cooked, only the minimum of vitamins that remain in it (10% ursolic acid) are lost. And, therefore, the healing properties will be preserved.

Similarly, you can cook jelly. Dilute 1 tbsp. l. starch in a glass of water and add this solution to the peel and sugar or honey (sweetener for diabetes), filled with water. Boil the mixture until thickened for 10-15 minutes. Then pour in the juice in a thin stream, mix and turn off the heat. So it will be possible to preserve useful substances and get a drink of the usual viscous consistency.

Kissel and fruit drink are equally useful, but kissel also has an enveloping effect on the walls of the stomach and intestines, protecting the mucous membrane and preventing the development of dysbacteriosis. You can add lingonberries to the juice in an amount of 1 to 1 with cranberries. Cowberry enhances the diuretic effect, which is good in the presence of edema and sediment in the kidneys and bladder. But lingonberries give bitterness to the fruit drink, to improve the taste it can be sweetened with honey.

Important! The calorie content of the freshest cranberries is low - 28 kcal (calorie content of dried or dried - 308 kcal). The calorie content of a drink made from fresh berries is about 49 kcal due to the sugar content in the composition.

cranberries for immunity

The benefits of cranberries for the immunity of children and adults are explained by the content of vitamin C in berries. Fresh and frozen berries contain 15 mg, dried and dried berries contain 0.2 mg each. This vitamin strengthens the immune system and increases the resistance of the human body to the effects of viruses and infections.

The daily intake of it in women and adolescents is 70-100 mg, in men - 120-150 mg. But during an outbreak of colds, as well as during illness, it should be increased to 100-120 mg for women and 150-170 mg for men. The use of berries to increase immunity is shown both for children and adolescents, whose immunity is lower than for adults, and for people with poor health, for example, during the recovery period after an illness. This will help prevent new infections. Honey will enhance the effect of cranberries, as it also contains vitamin C (0.5 mg).

The benefits of cranberries for pregnant women are also due to the presence of vitamin C. During pregnancy, weakening the immune system is very dangerous. Infections and viruses that a woman can catch will harm not only herself, but also the child. However, the use of drugs during pregnancy is limited. To keep immunity high, it is recommended to consume more vitamin C - up to 120-150 mg. Include more foods containing this vitamin in your diet (cranberries, lemon, spinach, black currants).

Drink juice or jelly with or without honey daily, 1 glass a day (both children and adults, including pregnant women). After three days, take a break for the same period to prevent an increase in the acidity of the gastric juice and the occurrence of heartburn. After that, continue taking another 3 days. You can stop the course after the end of the epidemic of colds or after recovery. Pregnant women should stop using in the last weeks of pregnancy so that the acidity of breast milk does not increase. It can be harmful to children, as it damages the walls of the large and small intestines, as well as the stomach. The doctor will help determine the timing of admission more precisely.

Benefits for the urinary system

The benefits of cranberries for the body of children and adults also lie in its positive effect on the urinary system and kidneys. It manifests itself in the following:

  • The content of acids in cranberries (3.1 g in fresh, 0.1 in dried and dried) contributes to the acidification of urine, resulting in a decrease in the content of calcium compounds in it. It is the low acidity of urine (high content of calcium compounds) that causes the formation and growth of stones in the kidneys and bladder;
  • Cranberries (berries and juice) contain proanthocyanidins. These are natural antibacterial substances that have a positive effect on health. From juice or berries that have entered the stomach, they are absorbed into the body and excreted in the urine, providing an antibacterial effect on the urinary system;
  • The mild diuretic effect of cranberries helps cleanse the kidneys and bladder of sediment. Lingonberry has a more pronounced diuretic effect. Its addition to fruit drinks enhances the effect.

For both adults and children, it is necessary to take fruit drink or cranberry jelly (with or without lingonberries) in courses of 3 days, taking breaks for the same period. So the healing properties will be revealed to the maximum, and no harm will be done. The high acidity of the drink will not have a negative effect on the stomach and tooth enamel.

You can use cranberries with honey (which will additionally increase immunity due to the content of vitamin C) or without. The use of lingonberries will additionally relieve edema, because it has a diuretic effect.

Cranberries to normalize blood pressure

Morse or cranberry jelly with or without honey is indicated for use by people with hypertension. This drink has a diuretic effect, relieving swelling and thereby lowering blood pressure. Cranberries have a mild diuretic effect. Cowberries have a much stronger diuretic effect. It can be added to juice to enhance the effect. In this case, cranberries and lingonberries are mixed in equal proportions.

Potassium in the composition strengthens the walls of blood vessels and keeps them in good shape. It also has a positive effect on pressure, normalizing it.

Application in dentistry

The content of proanthocyanidins is the main property of the berry, which explains why cranberries are useful for the oral cavity. These compounds have an antibacterial effect. They prevent infection and inflammation from developing. It is recommended to use juices, jelly and other drinks from the berry for gum disease (gingivitis, periodontal disease, periodontitis), their increased bleeding (in order to prevent the development of infection), stomatitis.

The content of acids in the berries themselves, as well as in juices, jelly, fruit drinks from them, has an aggressive effect on tooth enamel. This destroys the dark plaque on the teeth. Daily use of juice or jelly leads to getting rid of dark plaque. But it also tends to increase the acidity of saliva and begin to destroy tooth enamel. It is the increased acidity of saliva that causes caries between the teeth. You can reduce it after drinking cranberry juice by drinking or rinsing your mouth with water with an alkaline reaction (Essentuki). Milk intake also helps, because it also has an alkaline reaction.

Benefits for Diabetes

Cranberries can be used in diabetes. Its use does not cause an increase in blood glucose in type 1 diabetes. The use of cranberries in type 2 diabetes is not only not harmful, but also beneficial.

This is due to its ability to regulate the work of the pancreas. It is this gland that produces insulin, which helps maintain normal blood sugar levels. In type 2 diabetes, regular consumption of up to 100 g of cranberries helps to lower blood sugar levels.

Cranberry for men

For men, cranberries are beneficial for several reasons. Potassium has a positive effect on blood vessels, increasing their elasticity and tone, which indirectly improves potency. In addition, catechin and epicatechin (organic substances present in cranberries) combine with proanthocyanidins, which are also in the composition, and form large polymer bonds that help relax blood vessels, similar to Viagra. Cranberries are useful for men as a means of increasing potency.

When should you not eat cranberries?

Despite the fact that the benefits of cranberry juice are beyond doubt, there are contraindications to the use of this drink. Also, in these cases, you can not use the berry in its pure form, juice or jelly from it:

  1. the property of cranberry juice to acidify the environment makes it unacceptable for thinned and partially destroyed tooth enamel, since consumption causes pain (when acid hits the dentin under the enamel, the processes of nerve cells located in it transmit an impulse to the dental nerve, causing pain);
  2. the same property explains the contraindication to taking cranberries with weakened enamel, since the acid acts aggressively on it, destroying it even more;
  3. gastritis with high acidity, heartburn, ulcers - absolute contraindications to taking cranberries, its juice or cranberry jelly due to the fact that it increases the acidity of gastric juice;
  4. individual intolerance (allergy to cranberries) - contraindications to the use of its derivatives (juice, fruit drink, jelly, jam);
  5. constant use of cranberry juice or jelly leads to leaching of salts from the body, so take them 3 days in a row with a break for the same period;
  6. in case of diabetes, exclude or replace sugar or honey in fruit drinks with natural sweeteners approved for diabetes;
  7. the last weeks of pregnancy and breastfeeding are two more contraindications, since the increased acidity of milk can lead to stomach problems in a child.

If the use of cranberries begins during pregnancy, it is better for a woman to first consult a doctor. Cranberries tend to mix poorly with certain medications. For example, a contraindication to its use is the use of sulfa drugs (antimicrobial agents such as Dermazin, Kelfisin, Silvederm).

The benefits and harms of cranberries discussed in the article are relative. This is not a cure, but only an additional therapy. Cranberry juice with lingonberries will not relieve hypertension, but is good as an additional remedy.

If the fruit drink turned out to be sour enough in taste, you can add honey to it, thoroughly mixing the product in the drink. It should be clarified that honey can be added to a hot liquid only after the temperature in it drops to seventy degrees or lower.
