When processing meat, this fact is important. Coarsely ground minced meat remains juicier during heat treatment due to the fact that the fiber structure is not completely cut.

After the minced meat is ready, you need to add raw onions to it. For one kilogram of meat you need to take two medium onions. When chopping this vegetable, you should not use a meat grinder. It is best to cut the onion with a knife. All professional chefs do this, since grated onions quickly lose their juice, and during heat treatment the dish may not have enough moisture. To finish preparing the minced meat, you also need to add salt, pepper and herbs. If the minced meat is well kneaded, then you will not need to add an egg to it.

To prepare the filling, you need to fry 0.5 kg of champignons in a frying pan, and add onions to the finished frying.



At the next stage of cooking, you need to correctly form the nests. To do this, the resulting brick of minced meat must be divided into 8 parts in even lines.

80 ml kefir;

salt;

five quail eggs;

60 ml vegetable oil;

five slices of white stale bread;

fresh greens.

Cooking method

Peel the onion and finely chop it. Fry the onion in vegetable oil until golden brown. Rinse the greens and finely chop. Pour boiled water over slices of white bread and leave to soak. Cooking method

To prepare the base we use mixed minced meat. Grind the oatmeal in a coffee grinder, put it in a bowl and pour in slightly warmed kefir. Stir and leave for half an hour to allow the oatmeal to swell.

Combine oatmeal with minced meat. Peel, rinse and finely chop the onion. Add to the mixture of oatmeal and minced meat. We also pass the garlic through a press here. Salt and season with spices. Mix everything with your hands until a homogeneous mass is obtained.

Oil the baking sheet. Divide the base mixture into equal parts, roll into a ball and place on a baking sheet. Make a depression in the center. Three large cheeses. We distribute it among the “nests”. Beat one quail egg on top.

We clean the forest mushrooms, thoroughly rinse them to remove dirt and sand. Cut into small pieces and boil in lightly salted water. Place in a colander and cool.

Grease a baking sheet with oil. We make large round pieces of minced meat and place them on a baking sheet. Make a hole in each one using a spoon or glass.

Place mushroom filling in each cavity. Place the baking sheet in the oven for half an hour, preheating it to 180 degrees. Sprinkle each “nest” with cheese and put it back in the oven for about seven minutes. Serve the dish with a fresh vegetable salad or side dish.

Ingredients

800 g pork;

salt;

two heads of onions;

seasonings for meat;

Russian cheese – 200 g;

breadcrumbs – 150 g.

three fresh tomatoes;

growing oil;

parsley;

kitchen salt;

sour cream – 30 g;

cheese – 100 g.

Cooking method

Wash the pork tenderloin under running water, dry with napkins, trim off all excess and cut into slices. Peel, rinse and coarsely chop the onions. Grind the meat and onions in a meat grinder.   • Mayonnaise – 200 gr.;

Preparation:

1. Take homemade or purchased minced meat. Salt, pepper and add one onion and garlic pureed in a blender. Mix well. We divide it into large balls, which we place on a baking sheet greased with vegetable oil. From each you need to make a cake with sides or a cup, as in the photo below.

2. Peel and grate the potatoes on a coarse grater. To prevent it from darkening, you can sprinkle it with lemon juice. We arrange them in our nests. Add a little salt on top.

This option is very similar to the previous one. Only here we will not use mushrooms. But it turns out no less tasty. And it takes less time to prepare them. You can add any greens to the minced meat if desired. I use onions.

Ingredients:

  • Minced beef – 800 gr.;
  • Onion – 1 pc.;
  • Green onion – 1 bunch;
  • Potatoes – 2 pcs.;
  • Cheese – 100 gr.;
  • Chicken egg – 1 pc.;
  • Salt, pepper - to taste.

Preparation:

1. Peel the onion and grate it on a coarse grater. To avoid tears, you can use a blender or meat grinder. We also chop the greens. Add everything to the minced meat. Salt and pepper, and also break the egg. Mix well and beat the meat mixture. We form the balls and flatten them slightly, placing them on a baking sheet covered with parchment.

2. To get the shape of the nest, we will make a depression using a glass. We will correct defects by hand.

The minced meat will not stick if you first moisten the bottom of the glass with water.

3. Peel and grate the potatoes on a coarse grater. Place into improvised cups. Add a little salt on top. Place the baking sheet in the oven, preheated to 180°, for 15 minutes.

4. After time has passed, take it out and sprinkle with grated cheese. Bake again for 10 minutes.

Would you like potatoes and mushrooms? Then you can take the eggs. Agree that this is even simpler. They do not need to be boiled or cut. We need them raw. Well, you can’t do without cheese. It will be even tastier with it. Speaking of eggs. This time I took quail. But you can get by with one chicken for each nest.

Ingredients:

  • Minced meat – 700 gr.;
  • Onion – 1 pc.;
  • Salt, pepper - to taste;
  • Garlic – 1 tooth;
  • Chicken egg – 1 pc.;
  • Quail eggs – 20 pcs.;
  • Cheese – 100 gr.

Preparation:

1. Peel the garlic and onions. Place in a blender and puree. Add to the minced meat along with the egg. Salt, pepper and mix well. We make buns and put them in a baking dish. then use a spoon to make indentations to form nests.

2. Then put cheese, grated on a coarse grater, into each.

3. Break eggs into each. As I already said, I have quail ones. Therefore, there will be several pieces per serving. Place in the oven to bake for 25 - 30 minutes at 180°.

This method is no less tasty. This one is just perfect for any table. I would also call this dish dietary. After all, it contains only those products that we need in our diet every day. However, no fatty sauces.

Ingredients:

  • Minced chicken – 500 gr.;
  • Bread – 1 piece;
  • Chicken egg – 4 pcs.;
  • Tomato – 1 pc.;
  • Cheese – 50 gr.;
  • Greens - to taste;
  • Salt, pepper - to taste.

Preparation:

1. Soak a piece of bread in water. Then squeeze the liquid out of it and add it to the minced meat along with one egg. Also add salt and pepper. Mix well. Divide into three parts and make a lump from each. Place in a baking dish and form nests.

2. Break an egg into each. Add a little salt.

3. Finely chop the greens. Sprinkle its contents with minced meat. We also cut three circles from the tomato and fold them on top.

4. Let's grate the cheese on a fine grater and cover our nests with it. Place in the oven for 30 minutes. They will be baked at 180 degrees.
